Honey Wheat Cookies
As an overall cookie in general, I'd give these 4 starts, but as a sugar-free, healthier version of a peanut butter cookie, it gets 5 STARS! Very easy to make. I used wheat germ instead of the bran and Carnation powdered cream instead of the powdered milk. I softened my butter in the microwave and it had started to melt a little, which would probably account for the soft consistency of the batter. But I put them on parchment paper and they flattened out beautifully -- nice and round and thin. Perfect. When they first came out of the oven they were crispy around the edges but soft and chewy in the middle. I wanted a crispy cookie so I turned off the oven and put the cookies back in for a while to crisp up. They are really, really good. I'll try cranberries and/or using fresh made peanut butter using honey roasted peanuts. Brought them to my office and no one could tell they were "healthy." Kinda has a texture/taste reminiscent of a graham cracker.

Balsamic and Rosemary Grilled Salmon
Made this recipe as is, but doubled the recipe and put all ingredients in a blender to save time on mincing garlic and chopping rosemary. Marinated salmon in a ziplock bag for about 2-1/2 hours and then grilled it. It was perfect! Taste was wonderful. Everyone loved it. No leftovers!!!

Waffles I
I've been looking for a waffle recipe that I could make ahead of time and would keep for a few days to use when I go camping. Also during the week I can use just enough batter to make 2-3 waffles (belgian type) and put the rest in the frig for the next day. Tried several recipes, including several yeast recipes, but nothing was as light and crispy as this one. (The waffles actually taste better if the batter sits for a day!) Doubled the sugar and the vanilla and used butter instead of oil. **NOTE: During our last camping trip the power went out and we couldn't use the waffle maker so we thinned out the batter with a little water and made crepes -- came out really good!
