Pistachio Salad

DITTO to what is said below. READ the directions people. DO NOT make the pudding beforehand. Mix DRY pudding with the pineapple. Sheesh. Delish AS WRITTEN!

Campbell's® Easy Chicken and Cheese Enchiladas

I thought the basic concept was good, I tweaked mine a bit and my family thought it was a hit. I used the campbells fiesta cheese soup in place of the cream of chicken, used the sour cream and monterey jack cheese, and omitted the chili powder. I then added some mild salsa as we don't like really spicy at our house. The mixture was a bit thick so next time I may thin with milk. I mixed some of that in with the chicken and put it in the tortillas and spread the remaining mix on top and sprinkled with cheese. Baked until bubbly and delish! I'm eating the leftovers at work as I'm typing this review!

Chicken Fajita Marinade

WOW. This was good. Flavors meld well and are nice and clean. I actually marinaded the chicken for a full day, not intentionally. I cut them into nice pieces and sauted them in a skillet with peppers and onions. I added a bit more cumin than the recipe called for.

Angel Chicken Pasta

Slow-Cooker Pepper Steak

Meat was very tender but lacked a WOW flavor for me. Tasted like my swiss steak I make. Was hoping for more of a "chinese" taste. Kids loved it though!

Saucy Stuffed Peppers

YES! This is how I always had stuffed peppers growing up as a child! I used minute rice and they didn't turn out mushy. I only used 4 peppers stuffed and made the rest of the meat mixture into balls and cooked them in the juice. Made a nice gravy we poured over mashed potatoes. Thank you!

Chinese Cabbage Salad I

Excellent recipe! I've had this before and lost my original recipe so I was happy to find this one. The only things I changed was I used splenda instead of sugar, I used a prepackaged broccoli slaw mix, decreased the oil a bit and added a grilled chicken on top for a nice lunch salad. I added almonds (as that is what I had) and the ramen noodles right before serving to retain crunch. YUM!

Pretzel Salad II

Excellent blend of sweet and salty. I had no problems with the layers blending. I did let my strawberries thaw and cut the water down just a bit. My jello layer was too firm so next time I will add the recommended amount of water. The crust sweet/salty ratio was perfect. It got rave reviews at my Mother's Day dinner, even with the firm jello layer! I did ad another layer of cool whip as another reviewer posted. I don't think I would like it as well without it. Thank you for the recipe!

Slow Cooker Mashed Potatoes

Made these at Thanksgiving last year. I always add cream cheese to my mashed potatoes and have never had problems with them tasting like glue. I have never thought of putting them in the crockpot though and it worked out great. Not much diferent tasting than my normal taters but it did help with dinner prep. thank you!

Baked Spaghetti

I thought this would taste just like lasagna but it didn't. My whole family liked it, even my 16 yo who doesn't care for spaghetti. We did make some changes based on other reviews and what we had on hand. I did use 2 jars of spaghetti sauce and it was just enough for 1 pound of spaghetti...possibly a bit toward the dry side. I still only used 1 pound of hamburger as we don't like a real "meaty" spaghetti. We didn't have cottage cheese so I eliminated it. I usually add it to my lasagna, but I liked it without. The noodles were delicious even before we put the sauce on. I used freshly grated parmesean which I think makes all the difference. I will be making it again. Will probably add green pepper and garlic to the hamburger mixture. Thanks for a good recipe!

Buffalo Chicken Wings I

I followed others' suggestions and dredged the wings in flour with seasoning salt before frying them. I also doubled the sauce for the amount of wings I needed. They were good and hot but I was trying to make some of them less hot by adding more butter and less sauce...didn't work too well. With the addition of the flour to the wings the sauce did stay on. Don't "boil" your sauce or it will separate. My first batch had to be tossed.
