Pork Chops Over Rice

We are not big pirk eaters, but i had just bought a huge piece from the New Year's sales. My husband cut some pcs of pork off a whole boneless loin. We used those. And I had already cooked white rice in the fridge, so we just used that too. I've also played with the spices and varied it each time I've made it. Tastes great each time.

Peanut Butter Balls VIII

I liked these a lot. Added in local honey, non-GMO soy protein powder (instead of the powdered milk), toasted oats. I keep them in the freezer and grab one when I want a snack. I also through a few in a small container and use them to give me a boost when I know I will be out shopping or on a trip for awhile.

Baking Powder Drop Biscuits

These are a winner! I did reduce the sugar to 1 TBS, plenty sweet enough. If you do not like a sweet biscuit, you may want to reduce it even more. Great texture

Pumpkin Wheat Honey Muffins

these are delicious! I added a full cup of pumpkin, reduced the amount of oil to 1/4c. + half of a 1/4c. Added in more walnuts (which were almost ground) and raisins. I also put in a little over a 1/4c. Bob's Red Mill golden Flax seed flour. This ups the fiber and other health value. They are perfect!

Porcupines

Very yummy!!!! I do brown mine before baking to get out more of the grease. I added a green pepper. Also, after it baked for the 45 minutes, when I remove the cover I put shredded 2% mexican cheese on top- so yummy!

Apple Raisin French Toast Strata

this is ok. it is a little bland for my taste & I don't care for the soggy bread. I did follow the other reviewers advice & changed temp to 350. Baked for about 65 minutes. Spread the cream cheese on the trader joes cinnamon bread before I cut it up. Used apple pie filling (thought it would add more flavor). Used 7 eggs- but only 3 yolks. Used low-fat half & half.

Cranberry Pistachio Biscotti

Delicious!!!! Definitely leave out the salt if you use the salted pistachios- and definitely add more pistachios and cranberries. Also- you may as well double it now, or you will have to make more when everyone eats all of them so quickly.

Corn Chowder I

Did not have a ton of flavor. I thought it would have more bacon taste. I used only 2 cans of creamed corn & 3 ears of fresh corn (cut from the cob). I would only use 1 can of creamed corn next time- it was to sweet. It was ok, but I think that I may try a different recipe next time.

Fruit Pizza

Everyone loved this! I used 2 packages of the store bought dough, and made it in a rectanglular cookie sheet. I used kiwi, strawberries, bananas and garnished with blueberries and blackberries. I also used the glaze that was made with 1/2c. orange juice, 2 T. lemon juice, 1T. cornstarch, 1/4 c. water and 1/2c. sugar. It made it nice and shiny and stopped the bananas from browning. It went over VERY well at the baby shower I made it for.

Annie's Fruit Salsa and Cinnamon Chips

This salsa was great- the ONLY reason why it wasn't a 5 star was because of appearance. It look red and 'mushy'. It was very juicy too- could be a good thing or a bad thing depending on your preference. Though it was crisp and refreshing. I used kiwis, fuji apples, strawberries, a FEW raspberries. I added NO SUGAR. I added a few teaspoons of strawberry no sugar added preserves.
