About this Cook
I always loved cooking for my family and friends, and now that the kids are grown with their own families, I left my career in the legal field, and started my own catering business in February of 2002. I'm loving every moment!
My favorite things to cook
Mostly comfort foods, but I'm experimenting much more with the help of All Recipes. I'm having fun with more restaurant style recipes that I use in my catering service and at home.
My favorite family cooking traditions
One grandma was a wonderful baker, the other grandma couldn't cook her way out of a can of Dinty Moore, but they were both wonderful. As long as we sat at the dinner table together, the meal was great.
My cooking triumphs
Catering an outdoor wedding for 110 and doing it myself with help from one other person. And cooking for "my boys" (65 of them) and always getting the best compliments ever.
My cooking tragedies
Setting off a fire alarm when I didn't turn on the exhaust fan over the stove at a client's premises while toasting rice! I've learned to always turn on the exhaust in case the fire alarm is sensative!

Shelby's Microwave Meat Loaf
As others, I was skeptical about microwaving a meatloaf. I halved the recipe for the two of us; used a glass pie plate with a custard cup turned upside down in the middle, and arranged the meatloaf around it. Thank you sooo much. Loved not turning on the oven on a hot summer day! And, yummy too. : )

Veggie Vegetarian Chili
YUM! This made a lot, even halving the recipe! So I divided it into containers to freeze. I did double up on the veggies & added green beans in place of the corn; sauteed the mushrooms, onions & peppers in some beef stock to give it some meaty flavor (hubby's a carnivore); & used an extra chili seasoning packet bc I was low on chili. Tonight mixed w/whole wheat elbows & cheese. This is a great budget friendly recipe, a great way to get extra veggies onto your plate..and MOSTLY..delicious! Thank YOU.

Sicilian Sausage Soup
I'm giving this a 5 with a couple of changes. I used homemade chicken broth, with pieces of chicken; added two cloves of garlic; one green pepper; added two bay leaves; and a pinch of crushed red pepper; also had zucchini on hand so added that. Really yummy. Can't wait for hubby to come home and try it!
