About this Cook
I am the mother of 3 very handsome sons. I am disabled due to sarcoidosis/neurosarcoidosis and diabetes. I have been off work for 10 years now, and am connected to an oxygen machine 24/7. I have to carry an oxygen tank with me when I walk the dog or try to go shopping. I am currently totally engrossed in making seed bead jewelry as gifts and the hope of some day selling some of it!
My favorite things to cook
Two Belizean dishes that my former husband taught me to make. I make them for my sons, when they have the opportunity to come for a visit (they all live at least 400 miles away from me.). Also love cooking/baking for the holidays to send to my sons, grandchildren, sister and parents.
My favorite family cooking traditions
We always have homemade egg noodles with our turkey dinners for the holidays. We put them on top of our mashed potatoes instead of gravy. I also love to make M&M Christmas cookies for my family.
My cooking triumphs
I brined my first turkey this year for Thanksgiving!

Oatmeal Applesauce Bread
I found this to be the best, most soft and flavorful bread machine bread I have ever had! The touch of applesauce gives it a light, sweet taste!

Strawberry Oatmeal Cream Cheese Bread
I had good luck with this recipe, except that I, too, had to add an extra 1/2 cup of flour to it, to make it stiff enough. It came out nice and fluffy. I think I will add additional strawberries next time, so as to add a bit more of their flavor to it. I love to make breads in my bread maker, but had found few recipes until now! I look forward to making this bread and many others in the future!

Lasagna Spirals
This is the first time I have made a lasagna recipe in which I cooked the noodles, (I have been lazy, and made microwave lasagna instead.) I found making the recipe fun, but I questioned putting in the nutmeg, but decided to follow the recipe to the "T" for the first time. Unfortunately, I wish I had left it out. Other than that, I did enjoy it, overall! This won't keep me from trying it again, with a few adjustments!
