This is a great recipe for sour cream chicken enchiladas. I do have a hint to share, that I discovered out of desperation when I had everything all mixed and found there were no tortillas in the house. Rather than wrapping the filling in corn or flour tortillas, put in a hard taco shell. Line the shells in your pan, fitting in as many as you wish. Even if they stand straight up, that's fine. Cover the entire top with the sauce, making sure that all of the crunchy shells have topping on them. In the course of baking they will soften perfectly, and are much easier to fill that regular corn tortillas. We vary the recipe by using whatever meat on hand, and substituting cream of chicken for cream of mushroom. Thanks for a great recipe!
