I originally got this recipe from my sister-in-law and have been making it (with rave reviews) for years. There are lots of different coconut cream pie recipes on this site, but to me, this one perfectly captures what a coconut cream pie is--creamy, coconutty goodness! The only thing I do that this recipe doesn't specify, which adds a lot to the eating experience: top the whole pie with a layer of homemade whipped cream, so that your lwhipped cream is a good 1" thick--or more!! If you use lightly sweetened whipped cream, it really offsets the sweetness of the pie perfectly. Each bite is a like a dream!

I made this version, since it does not call for self-rising flour and cornmeal. The only thing I did differently was to process the onion in the food processor until it was finely chopped and very liquid; I did this because the batter seemed to dry otherwise. Pureeing the onion gave the hush puppies a great flavor without obvious onion pieces. These are *the best* hush puppies I've ever had. Excellent.

This is a great recipe for sour cream chicken enchiladas. I do have a hint to share, that I discovered out of desperation when I had everything all mixed and found there were no tortillas in the house. Rather than wrapping the filling in corn or flour tortillas, put in a hard taco shell. Line the shells in your pan, fitting in as many as you wish. Even if they stand straight up, that's fine. Cover the entire top with the sauce, making sure that all of the crunchy shells have topping on them. In the course of baking they will soften perfectly, and are much easier to fill that regular corn tortillas. We vary the recipe by using whatever meat on hand, and substituting cream of chicken for cream of mushroom. Thanks for a great recipe!

I use Allrecipes a lot, but this is the first recipe I've rated. I followed the recipe as written and it was delicious. Be warned, though: I used about a 16" pizza pan and the cookie spread out to the very edges (many others complained about overflow with smaller pans, and I can see why). My husband is picky and will let a batch of cookies rot before eating something he doesn't like. This has disappeared. Great cookie dough, lots of fun! I wrote on it with Luscious Buttercream Frosting, also from this site. I'll be doing this again!!
