Light and Fluffy Spinach Quiche

DELICOUS! I make it without a crust sometimes and it is just as good. Even my 10 month old baby gobbles it down. I do saute the onions and garlic.

Hasty Chocolate Pudding

I thought I should rate this since I CAN'T STOP MAKING AND EATING IT!!!! I didn't even know I liked pudding. I can't believe how delicious it is for being so easy. It's one of the few recipes in the world I make exactly as written, and it is AWESOME. Even when it doesn't turn out to be smooth the little cocoa powder chunks taste like truffle bits. MMM. The only bad part is waiting for it to cool. Haha. I make it with whole milk. If you love chocolate, this is the recipe for you! Sometimes I make chocolate yogurt by mixing a bit of this with some plain whole yogurt.

Sarah's Rice Pilaf

Don't be mad; I wanted to rate this recipe even though I made changes. I used spaghetti broken into 1 inch pieces because I didn't have orzo. I left out the garlic and onion because I wanted it to taste "plain" so that it didn't compete with my flavorful main dish. So all I used was pasta, butter, rice, and broth and it was delicious!! Greater than the sum of its parts for sure, and very easy.

Healing Cabbage Soup

This is one of my favorite recipes of all time. As written, it's a 4 star recipe. With a few generous shakes of red pepper flakes, extra chopped garlic, chicken stock instead of bullion, and a can of drained kidney beans, it is a 5 star cold-kickin', bone-warmin' soup! Try it! It's so cheap, easy, and delicious. I had two bowls today and can't wait for more tomorrow.

Pasta with Scallops, Zucchini, and Tomatoes

This tasted like 10 stars when I was done with it, but in all fairness I'll give it a 4 since I made so many changes. I didn't have garlic in the house (I freak out when that happens) so I sauteed half an onion with a bit of garlic salt instead. I used shrimp instead of scallops. I used fresh parsley as well as basil. I added a splash of white wine and a spoon of pesto. It was incredible. My husband loved it and he doesn't even like tomatoes, onions, or zucchini very much. So I did make a lot of changes, but this recipe has GREAT bones, and I would highly recommend that you try it and feel free to improvise.

English Muffin Bread

This bread is unbelievably comforting and tasty, especially for the ease and price! I've made it several times exactly as written except that in my oven it only takes 15 minutes. Cut it into thick slices, toast it well, and top with butter. Heaven. Last night my husband and I had beer and english muffin bread toast for dinner and it was one of the best meals I've had. :)

Quinoa and Black Beans

I tried this recipe because I was looking for a way to cook quinoa for the first time. From the moment I tasted it I knew it would become a regular. It is amazingly comforting and exciting at the same time. The only really fresh ingredient is cilantro, so it's easy to always keep the ingredients on hand. My husband and I always eat it as a nutritious main dish...and the recipe, for us, only makes 2 servings. So usually I double it (but I don't double the black beans) and we eat it for lunch the next day. It is as good or BETTER at room temperature the next day. I toast the rinsed quinoa in a hot dry pan before I use it and I double the cayanne. I LOVE THIS RECIPE! TRY IT! I tell all my friends about it and my coworkers drool when I bring it for lunch.

Quick and Easy Pizza Crust

This recipe was a great find! It tastes just about as good as a typical homemade crust...without the wait for rising and kneading! Hooray! So now I can decide to make this for dinner and it's done in no time. I have used all purpose flour and half wheat flour. A couple of times I made breadsticks instead: sprinkled the dough with garlic salt, a bit of olive oil, and parmesan cheese before baking. Cut into strips. Yum. Thank you so much for this recipe that fits right in to a busy life.

Bran Muffins

Delicious! I love the dense, healthy bran taste of these. I used golden raisins (mmm! tastes like candy!)and can't stop eating these muffins. I didn't think the molasses was too strong at all. Great recipe.

Herbed Mushrooms with White Wine

Mmmm. I just finished eating a plate full of "herbed mushrooms with white wine" and I am still a little dizzy from how delicious they were! They had all the incredible flavor you'd expect from some fancy restaurant and yet I made them in my own home for about two bucks and in about five minutes. Amazing. With garlic, white wine and olive oil you just can't go wrong. The 'shrooms were meaty and delicious. note: I used half butter half olive oil another note: learn from my mistake and don't add the garlic early! It will burn and get bitter. (Even with the toasty garlic though, this was SO yummy).

Caramel Corn IV

When I made this recipe I doubled all the caramel ingredients, added nuts, lowered baking temp (to 250)and reduced baking time (to about 15 minutes). So...I guess I made quite a bit of changes. But I am still extremely grateful for this recipe! I'm going to make it tonight for the third time in about a month, because my hubby keeps begging for it. MMmmmm.It is SO addictive--don't stay home alone with a bowl of this stuff!
