Made for Christmas Eve - was a bit hit! We needed it more medium-well since I'm pregnant, so cooked it as follows:
460 for 12 minutes, 400 for 8 minutes, 325 for 20 minutes/lb. We took it out of the oven when the temp reached 135-140 and served it after about 20 minutes when it hit 150. Also added 1.5c beef broth and .5c. red wine to make a lovely au jus.
