About this Cook
The fact that I have Celiac disease has made me into a more creative person, I think. I'm in the predicament where food is my medicine so I research, research, research, then read some more! What I put into my body is definitely what I get out and I love to share my successes with anyone willing to try them.
My favorite things to cook
I love nothing more than a big plate of organic mixed greens with a good vinaigrette and slices of aged cheese, washed down with a glass of dry wine...wow, doesn't that make me sound snooty?! hee hee... I love that stuff but I also like rich comfort food and spicy ethnic dishes. And pie...mmmm pie.
My favorite family cooking traditions
I'm pretty well self taught, except for how my ex boyfriend tought me how to make perfect rice and also macaroni and cheese. btw, if you happen to see this: Thank You:)
My cooking triumphs
My biggest triumph has been getting to know the different viscosities of various gluten-free flours so now I can pretty much make anything I want and have it turn out. I'd like to write a cookbook or open a restaurant someday and share everything I know. Food that looks and tastes good and doesn't cost an arm and a leg makes me very happy.
My cooking tragedies
Too many to mention. That's the price you pay for wisdom;)

Alison's Gluten-Free Bread
This bread was delicious with character and I will make it again. In response to harlequin1031's comment: APPLE CIDER is made strictly from APPLES. APPLE CIDER VINEGAR is made strictly from APPLES. It is one of the few vinegars that are considered safe for Celiacs. When in doubt about an ingredient, always do your research, it will broaden the horizons of what you previously thought you could not have.

Orange Muffins
This is a very good recipe to work with. I made my version gluten-free by sifting together rice, corn and soy flours to make up the two cups of flour. To compensate for this and to make them more moist, I added an extra 1/4 cup of butter and a full cup of OJ. Cinnamon, nutmeg and fresh lemon peel spiced them up nicely, and a good handful of fresh cranberries gave them some kick. I was suprised to see them rise as much as they did, even for being gluten-free! I definitely will make these again.
