Healthier Pancakes

My family loves these. I have made them with fresh buttermilk and dried. When I made them with dried buttermilk, I found that they were more flat than with the fresh. So the last time I made them, I did not add the 1/4 cup milk. They turned out much fluffier. However, I think I prefer fresh buttermilk.

Whole Wheat Oatmeal Bread

I use this bread in our bread machine. It is almost a no fail bread. We love the texture and flavor. It could stand up to sandwiches better, but we usually are using it fresh from the bread machine. If it has time to cool, it is a great consistency for sandwiches. It also reheats well the next day. We use brown sugar instead of honey in it. To make up for the loss of liquid, I use 1 1/3 cups of water instead of 1 1/4. I have used both butter and olive oil in it with no noticeable difference. We also use oat flour instead of quick oats.

Refried Beans Without the Refry

I've made this several times. It is so easy and good. I don't worry about chopping up the onion or pepper. I just quarter the onion and seed the pepper. Then I throw them in and they get chopped up in the end. I also don't put as much salt as recommended. It's just too salty that way. But I at least double the cumin. We love that taste. I use my Oster hand blender to chop the beans after they are done cooking. I would guess that I remove about 2 cups of water from the beans before chopping them. I normally make a double batch and have extra burritos for left overs.

Corn Chowder IV

Hi! I am Rebecca. I like this recipe. When I was making this, I had a bad feeling that I might make it wrong, or it wouldn't taste good. But at the end, I tasted it, and it was so good! But I cut the bacon too big, and my mom said the onions were too big. My brothers liked it. For a side dish, we had corn bread. My family liked it. But I loved it!

Middle Eastern Rice with Black Beans and Chickpeas

This was great! I took other reviewers' advice and served it in pita bread with plain yogurt. Very satisfying. I also added only 2.5 cups of chicken broth. I had it as leftovers today wrapped in a whole wheat tortilla. It was still good, but I liked it better with the pita bread.

Holly's Hummus

I thought this hummus was a bit bland alone. But with the addition of more lemon juice, it was quite pleasing on a whole wheat pita. I used regular olives and fresh cilantro but I only had dried basil. The basil gave it a definite Italian taste. I am adding this to my rotation.

Hamburger Cookies

I made these for my sons' birthdays on April Fool's Day. They were a big hit. Not one was left at the end of the party. I added potato straws to the platter with a dab of red frosting for french fries and ketchup. Very fun.

Tom Ka Gai (Coconut Chicken Soup)

Our family rarely agrees on a five-star rating. But this one got rave reviews. It's worth trying! I thought it was good without the cilantro and green onion. But those two ingredients took it to a whole new level. Modifications: 2TBS soy sauce instead of fish sauce. 4 TBS sugar - it tasted too salty and sharp without, two red-skinned potatoes diced.

Maple Sausage Skillet

This was a fun change from the norm. The smoky flavor of the sausage combined with the sweetness of the syrup, as well as the spice of the pepper. I didn't have all the ingredients, so I would like to try it again. I did not have onions or green peppers. So the veggies I used were carrots, celery, and broccoli. I also put in .5 tsp. of pepper, because I really wanted to contrast the spicy with the sweet. I used one pound of sausage. I made sure that the sausage was nice and brown before I added any vegetables.

No Bake Cookies V

Wonderful. These are everything that a no bake cookie should be. I had a little trouble with them setting in an hour. But by the next day they were all just right. I also used 1/2 cup less of oats, so that may be why they did not set up as quickly.

Chocolate Mint Cookies I

These turned out so well! I didn't have enough chocolate chips. But I had bought chocolate mint pieces to put on the top. So I used both chocolate chips and the mint chips. Then I topped them with the mint pieces. In the future, though, I will use the larger mints. The little mints were a bit hard to handle. But I didn't lose anything in the taste!
