Cuban Pork Roast I

Came out right the second time I made it. I used the crockpot the first time. Worked better for me in the oven. The flavor was amazing. I didnt find it overly citrus at all. I also added some emeril's essence one of the best things Ive made from allrecipes

Eggplant Parmesan II

Came out well. my bro is a meat man but really liked it. I followed the advice about weeping the eggplant and I baked them longer than the recipe but still not long enough. next time I will bake them at least 10 minutes on each side. Also one large eggplant was plenty of eggplant for me. Next time I think I will use the Trader's Joe's frozen breaded eggplant, which only has to be microwaved for 2 minutes. that will make things much easier. UPDATE: I have made this twice using the trader joe's frozen breaded eggplant. just as good but much easier

Okra, Corn and Tomatoes

I'd give it a low four because I think the corn took away from the flavor of the okra (my nephew, who enjoys a lot of the vegetable recipes I get off this site, agreed). I used Trader Joe's frozen sweet corn. Plus I only used a 16 oz bg and it was still way too much corn. I'd use less or no corn next time. Otherwise the flavor was good. I'm surprised people have a problem finding file powder. It is gumbo file and should be available with the creole seasonings in most big supermarkets.

Baked Ziti II

This came out very satisfying for me with some modifications. I added 1.5 lbs of ground turkey and 1 lb of chicken apple chardonnay sausage from Trader Joes, which I browned in olive oil and made my own meat sauce. I suggest even if you use a canned sauce, adjust the seasoning until it has enough kick I cut the ricotta in half as suggested and also doubled the mozzarella. I did a layer of sauce, then ziti mixture, then more sauce, then mozarella and parmesan. I only baked for 20 mins.

Baked Orange Roughy Italian-Style

Just tried this tonight, turned out pretty good. It was a little salty, but I brushed the fillets with a little seasoned salt (I always worry about fish being seasoned enough)and probably would skip that next time. Instead of butter I brushed olive oil on both sides before dipping in the bread crumb mixture. I used a canned parmesan-romano cheese combination. I also cooked it in an oven compatible cast iron skillet sprayed with pam.

Baked Stuffed Tomatoes

One of the most succesful recipes I have tried off of allrecipes; my brother and I really enjoyed this After reading the comments from a few reviewers, I upped the ingredients to avoid running out of stuffing, of course I ended up with too much, but the mixture is so flavorful (the bacon really sets it off) that it can be combined with lettuced for a great salad or mixed in with other vegetables I used both shredded and canned parmesan cheese; I also mixed together bread crumbs and canned parmesan and sprinkled the mixture on the tops before baking. Others mentioned that the green pepper didnt work for them; it worked fine for me so I think its a matter of taste. This is definitely a keeper for me

Mediterranean Vegetable Stew

After reading all the rave reviews, and even the one not so enthusiastic one complained more about the consistency, I was disappointed. Didnt taste much better than a canned vegetable soup to me. I'll finish what I cooked but I wont be in a rush to make this again
