Curried Chicken and Potatoes

Reviewed: Oct. 14, 2008
This was very tastey. I added a whole diced onion in the beginning and I know this may sound wierd but I melted some brie in it instead of yogurt. It gave it excellent flavor and creaminess. Next time I'll also add a bit more spices. I will add this into the regular rotation, thanks for the new recipe!

Rita's Spinach Casserole

Reviewed: Oct. 12, 2008
Hm I had high hopes for this one because my fridge was kind of bare but I had all the ingredients for this. I hate to say but it was kind of bland. It was also not very attractive and gloopy. Are the people who said it was great using pasta sauce instead of plain tomatoe sauce?

This was my first experience making filled cupcakes and they turned out perfectly! I used Currie's review and they were definately everyone's favorite here, thank you so much for the recipe and thank you for the recommendation Currie!

Gingerbread Cupcakes with Cream Cheese Frosting

Reviewed: Oct. 11, 2008
These are amazing! They definately taste like a perfect, not-too-spicey gingerbread cookie. Can't wait to make these again and again, thanks Currie for the recommendation!!!

Buffalo Style Chicken Pizza

Reviewed: Oct. 11, 2008
Loved this! I've been hesitating making this because I was afraid it would be too unhealthy, but decided to make it for a dinner for my brothers. So glad I did, they said it was the best pizza ever! I mixed in some bbq sauce with the buffalo sauce for the kids pizza so it wouldn't be too spicey and added sauteed onions and bell peppers to the other pizza. Fantastic! Will make this again for sure - it's not as unhealthy as I had thought :) !

Jay's Signature Pizza Crust

Reviewed: Oct. 11, 2008
We enjoyed this recipe and I think I will use this again. It was waaaay too thick of a pizza to use the whole batch for one pizza how the directions suggest. I think this would be good for 2 pizzas with a thick crust or 3 pizzas with a thinner crust. Thanks for the good recipe!

Quick Chicken Fajitas

Reviewed: Oct. 11, 2008
I followed this recipe exactly so I'm not sure what happened, but the flavor just wasn't there for us. Thank goodness I was able to find some taco seasoning in the pantry to give this some sort of flavor (though obviously not the flavor I was hoping for). I also ended up adding alot more fresh lime juice and fresh cilantro for more flavor. Next time I will leave enough time to try a fajita marinade recipe.

Chocolate Cream Cheese Frosting

Reviewed: Sep. 30, 2008
Fabulous! I don't usually like to alter a recipe too much before I've tried it once, but since I didn't have unsweetened chocolate, I had to. I only used half the sugar and doubled the chocolate using semi-sweet chocolate chips. Turned out perfectly rich and chocolatey and I will use this all the time! Thanks for the recipe!

Tiny Pecan Tarts

Reviewed: Sep. 30, 2008
Love these tiny little cups of happiness! As other reviewers suggested, I cut the filling in half and it was exactly the right amount. I was hesitant about this crust and almost used regular pie crust. So glad I didn't, this crust is perfect and so much easier to mold and shape! Can hardly wait to make these again!

Sunshine Toast

Reviewed: Sep. 29, 2008
So funny to read all the different names people have for this recipe. We used to call them "tiger eye toast". Just made this again this morning for my hubby for his birthday and he loved it.

Crazy Crust Pizza Dough

Reviewed: Sep. 28, 2008
This really was a disappointment to me, I'm confused as to how others got such great results. I made this recipe as directed and first of all, the flavor just wasn't there at all, needs ALOT more seasonings. Secondly, it stuck to my greased, non-stick coated pan horribly and upon prying out the pizza with an array of kitchen utensils, it ruined my good pan :( I will not be using this recipe again, but hey, other people had excellent results so give it a try! (use an old pan)

Strawberry Cake I

Reviewed: Sep. 27, 2008
This is so much better than boxed strawberry cake mix!!! The only thing I changed was to double the amount of strawberries (4 ounces only equaled 3 large flash frozen berries) and I pureed them so there were no icky wet chunks of berries. Love this cake paired with cream cheese icing!

Dorm Room Cheesy Tuna and Noodles

Reviewed: Sep. 26, 2008
What a pleasant surprise! This was actually pretty good and after adding some cooked chopped broccoli, it looked pretty too! (I did use cheddar cheese instead of american though...) I won't make this too often because the sodium police would be after me for feeding this to my kids, but they both gobbled it down so I'm sure I will make this every once in a while as something different for lunch!

Caramel Popcorn

Reviewed: Sep. 20, 2008
This was so delicious but I did have one tiny issue with it. After it was done, the caramel looked very grainy and clumpy on the popcorn, not a smooth shiny coat like store bought caramel popcorn. You didn't really notice the grainy-ness when eating it because of the crunch of the popcorn, but still, I was a little embarassed sending it to work with my hubby because it looks like it didn't turn out right... I don't know if this is normal for homemade and noone minded it or if maybe I just needed to boil mine longer than the 4 mins... Hmmm... Well I will definately try this recipe again and hope for better results, because it was so yummy!

Asparagus Soup

Reviewed: Sep. 16, 2008
This recipe is so easy and so versatile. I love to play around with it by adding different things such as red bell pepper sauteed over the stove with the onion and parmesan cheese pureed in. I think it needs more than a dash of garlic, and fresh garlic makes it wonderful. Will definately use this recipe again, thank you!

Banana Muffins I

Reviewed: Sep. 16, 2008
These are a wonderful, healthier version of banana muffins. I used flavored yogurt instead of sour cream so I reduced the sugar significantly, and also added about 1/3 cup of mashed strawberries. I'd love to try this recipe using whole wheat flour and adding nuts. These won't wow the socks off of anybody at a luncheon or anything (they're not super sweet, buttery or decadent), but they definately are a great on-the-go breakfast or a nice snack for kids and I will for sure make these again. Thanks for the recipe!

Alaskan Halibut Lasagna

Reviewed: Sep. 8, 2008
WOW!!! Hubby said this was the best meal I've ever prepared and company RAVED! I did make a few slight changes, but definately the praise is owed to the recipe and not my changes. Instead of halibut I used bay scallops, tilapia and shrimp, quickly seared and sauteed. I also added a layer of finely slivered veggies: italian squash, mushrooms and red bell pepper, also briefly sauteed. I mixed in a little fresh parmesan with the swiss cheese and added some garlic to the sauce. This dish is pricey (unless you've caught the seafood youself!) but I just know it will be a request again and again! Thank you for this recipe, it made me a goddess for a night! :)

Flourless Chocolate Cake I

Reviewed: Sep. 6, 2008
Amazing!!! Perfect for any elegant meal, it will impress any crowd! Just like the ones we got on a cruise, and cruise food is THE best! I put them in mini silicone muffin pans and only baked for 30 mins, worked great, and after chilling they just popped right out without the hot water. They look so elegant on a plate with pureed strawberry sauce and a mint leaf for garnish. For those who have never tried this, it is not at all like regular cake, almost like a dense cheesecake texture or even like fudge, but so rich and decadent. Good chocolate is a must for this. Thanks for the great recipe, will definately make this again!
