Pumpkin Cookies I

Reviewed: Nov. 6, 2007
A good pumpkin cookie recipe. These are a very good cookie-like texture (if you follow the recipe) and not at all cake-like, like alot of other pumpkin cookie recipes are. Only thing is they're a little bland. I added twice as much cinnamon plus nutmeg, ginger and cloves (or in other words, pumpkin pie spice) and they were much better that way. Also, mine took 17 minutes to bake to be just a little bit crispy on the edges but soft and chewy in the middle. Will definately hang on to this recipe. Thanks!

Spiced Pumpkin Seeds

Reviewed: Nov. 1, 2007
Delicious! The term spiced to me was a bit misleading though. These have a very subtle tangy kick which is very enjoyable! Will probably make these from now on instead of the regular salted pumpkin seeds. Don't forget to dry the pumpkin seeds over night first. Thanks for the fabulous recipe!

Easy Lemon Cookies

Reviewed: Oct. 27, 2007
This definately is the best cakemix cookie recipe. It doesn't taste like a cake mix at all, like white cake mix can sometiems. Mine actually took 10 minutes to bake, and were still nice and chewy. I also enjoy this recipe using 1 1/2 tbsp of lemon juice instead of extract for just a slightly different flavor. I can't see how anyone wouldn't like these unless you didn't like lemon. Also! Great recipe for young kids to help with because it's so quick. My daughter didn't lose interest right until they came out of the oven!

Healthy Banana Cookies

Reviewed: Oct. 25, 2007
This is a good base recipe for a healthy cookie/cereal bar, however needs some doctoring. I found it best adding applesauce instead of oil, cinnamon, dried cranberries along with the dates, and a few scoops of low sugar appricot preserves. Also, in my opinion the baking time is too long and the longer you bake it the more rubbery they become so you may want to cut the baking time down a few minutes. I had never imagined a healthy cookie so thank you for the recipe!

Raspberry-Glazed Rosemary Chicken

Reviewed: Oct. 10, 2007
This recipe was pretty good. I'm not a super great cook and I didn't have fresh herbs, only dried and unfortunately the cooking time was not long enough for the dried herbs so they were very crunchy and unpleasant. However, the flavor was good. For a little zing, I used olive oil and red wine vinegar instead of broth and I used dijon mustard instead of honey mustard. I will try this again with either fresh herbs or maybe in the crock pot with dried.

Mexican Chicken I

Reviewed: Oct. 9, 2007
A quick, healthy, easy dinner that tastes good! My husband and daughter both liked it and went back for seconds so I'd say it's a keeper! I used red and yellow peppers and topped with cheese. I would also recommend stirring the beans into the salsa mix so they don't dry out and cooking with the lid off half the time, the sauce was very watery.

Banana Cheesecake with Caramel Sauce

Reviewed: Oct. 7, 2007
Fabulous! I made it with 3/4 cup mashed banana, 1/2 tsp banana extract and a chocolate cookie crumb crust instead of graham. I garnished with walnuts, chocolate shavings, and caramel using the caramel recipe "chewy caramel" from this site. It's a huge hit! Thanks!

Chewy Caramel

Reviewed: Oct. 5, 2007
Sooo good! This candy just melts in your mouth! It didn't turn out super chewy like store bought and it was a little too soft, but this also could be my fault because I didn't have a candy thermometer. Can hardly wait to use this recipe for other creations!

Lentil Soup

Reviewed: Oct. 4, 2007
My husband discovered this recipe and enjoys making this for us. It is the best soup I've ever had and so healthy! Doesn't get any better than that! Definately need to cut the oil to about a tablespoon. Don't worry! It won't cut down the flavor drastically and it will make it a heck of a lot better for you.

Quick and Easy Alfredo Sauce

Reviewed: Sep. 18, 2007
Wow! This is the real thing! I sauteed fresh garlic in the butter first and used evaporated milk instead of milk (didn't need the extra richness, milk would have been just fine) and put this on a chicken alfredo pizza. Was easy to thicken up to a thicker consistency for the pizza and the cream cheese wasn't detectable at all. Definately keeping this on hand, thank you!

Peanut Butter Playdough

Reviewed: Sep. 18, 2007
Only used the first two ingredients like others suggested and it worked great! My two year old loved to have playdough she could eat, though just a few bites was plenty for a snack! And cutting the recipe down to 5 servings, there's still plenty left in the fridge for another day. Thanks for the recipe of a fun treat we all remember as kids!

Rolled Buttercream Fondant

Reviewed: Sep. 8, 2007
I chose this recipe because I had all the ingredients, but next time I will try another recipe. This was extremely greasy like everyone said and it cracked all over the place, no matter how much I rolled it I couldn't get the tiny little cracks out. It didn't stretch well either. In my opinion, store bought is better than this recipe. Always fun to try new things though, thanks.

Key Lime Cake III

Reviewed: Sep. 6, 2007
This cake is so delicious! A perfect cake alternative to key lime pie (though may taste a little more like lemon than lime, yummy just the same) Super moist but it did fall quite a bit. This recipe works the same with strawberry cake mix and strawberry jello (pretty for christmas with the two cakes stacked together!) As I saw from the other reviewers, the frosting wasn't thick enough so I only put in half the butter, let it set up a bit in the fridge and it was perfect.

Garlic Cheese Chicken Rollups

Reviewed: Sep. 4, 2007
I don't know guys... It sounded like a rich dish that I might get at a restaurant, but it just wasn't that good to me. The outside was dry and sandy, the chicken was bland, and the center was delicious but it tasted like it needed to be on a bagel, not in the middle of my dinner plate. I even added some extra spices to give it a boost. The flavors didn't blend well and nobody at my dinner table really loved it. Maybe marinara sauce over the top would bring it all together more? But I probably wont be trying this again.

Cake Mix Cookies IV

Reviewed: Sep. 1, 2007
Fabulous little cookies you can whip up in 5 minutes! Mine took the whole ten minutes to bake and were still very soft (how I like them) and I made them pretty small too (size of a chips ahoy cookie). I used a dark chocolate cake mix and nestle toll house dark chocolate/rasberry swirled chips. Can't wait to try the lemon ones like somebody else suggested.

Easy Garlic Chicken

I have to admit that looking at the ingredients I thought this chicken would be bland, but it turned out very tasty and moist! A quick recipe using ingredients that everyone always has in their pantry. Will definately make again!

Simple Scones

Yum!!! I made the orange cranberry kind, except instead of sour cream I used orange-cream flavored yogurt (because that's all I had) I also drizzled an orange/sugar glaze over each one and they are just delicous!

Blueberry Salad

Everybody loved this! Not too sweet and a better alternative to classic jello-salad. Doesn't seem quite special enough for the cost though, but will definately make this again!

Dill Lemon Chicken Pasta Salad

Reviewed: Jan. 19, 2007
A yummy, light-tasting, refreshing summer dish! Instead of celery (I didn't have any) I used chopped green onions which added alot of flavor and I seasoned the chicken with lemon pepper and a touch of garlic. I also used whole milk instead of buttermilk. I would definately make this again, it's a hit!

Stuffed Chicken Valentino

Reviewed: Nov. 4, 2006
This recipe was very easy, yet looked as though I spent alot of time on it! To add more flavor I poured Italian dressing over the chicken before I baked it, which to me was the perfect touch. I would definately make this recipe again.
