About this Cook
My favorite things to cook
I love to do pretty much anything on the stove: boiling, frying, braising, panbroiling, etc. Chicken is a particular favorite for cooking - it's so versatile! I also like to roast meats and vegetables in the oven, and have lately been trying my hand at outdoor grilling, to mixed results. :D I also love microwave cooking - so fast and easy! ~*~*~ I'm not a big baker - my baking is pretty much limited to whatever I can get in a box. :) Than being said, when I do find a good recipe, I hold onto it. I'm not afraid to bake a batch of cookies or a cheesecake from scratch from time to time.
My favorite family cooking traditions
Thanksgiving dinner! I just don't care for all the planning and "business". Too much scheduling and hubbub for me. :)
My cooking triumphs
I love to cook with chicken, and I usually work "on-the-fly", creating recipes as I go. Almost every single time, it comes out great (and the rest is really darned good too). I just wish I would write more of these recipes down!!
My cooking tragedies
I tried to make sourdough bread one time - and only one time - and ended up with two, wonderful smelling, perfectly shaped round loaves of building bricks. You could've killed an elephant with that bread!

This is by far THE EASIEST recipe I have ever used for fudge. I have made this fudge many times, with many variations on the basic recipe. Dark chocolate, milk chocolate, white chocolate, flavored, nuts, dried fruit, coconut...works like a charm nearly every time. I will tell you two tips: one, butterscotch chips do not make very good fudge as they don't melt the same as chocolate does, and two, green mint chips mixed with chocolate chips comes out an odd greyish-green color (though it still tastes really good). I have added 1-2 tsp of extract (orange and raspberry are two of my favorites, and peppermint is very good too) after the mixture's done in the microwave too. My favorite is a mix of 2 cups milk chocolate, 1 cup Hershey's Special Dark, chopped walnuts and dried cherries, and a tsp. of vanilla extract.

Country Apple Dumplings
the hardest part was cutting up the apples... mmm super good and easy! great substitute when i'm in need of an apple pie fix. definitely will be keeping this one around. i must admit i made one small substitution, but it was for reasons of cost savings - i used Shasta Mountain Rush instead of Mountain Dew (half the price for a 2-liter bottle).

Microwave Cake
Quick and super-easy... I made a variation, with spice cake mix and apple pie filling, with chopped walnuts in the bottom of the pan before pouring in the batter. Excellent!
