Simple Roasted Butternut Squash

Like other reviewers, I found the squash a pain to peel, despite following the reviewer's tip to microwave it before peeling. However, the cooked squash was so delicious that I'm looking forward to making it again. Update: I made this again, with a couple modifications that (IMHO) made it even better: I put the cubed squash, salt, pepper, 2 T. oil, and minced garlic in a bag ***along with 3 Tablespoons balsamic vinegar***. Then gave it a good shake to combine ingredients and poured it onto a shallow baking sheet sprayed lightly with Pam. I baked it 30 minutes, since we like it soft. The result was delicious. The balsamic vinegar was wonderful with the squash.

Awesome Sausage, Apple and Cranberry Stuffing

Cherry Chocolate Almond Croissant Bread Pudding

I made this for a company dinner and everyone loved it. It was both pretty and delicious. Definitely use an 8" square baking dish, or larger. It would never have fit into a pie dish. Be sure to add any left over milk-egg mix before putting on the top layer of cherries, chocolate, and nuts. The only thing I'd change in the future would be to only use 1/2 c. sliced almonds, and just put them on the top. I'll make this quick and easy dish again.

Mom's Zucchini Bread

This was excellent. The only changes I made was to toast the walnuts before adding to the mix, and to decrease the sugar to 1 cup of white sugar and 1 cup of brown sugar. I'll definitely make this again.

Chicken Chimichangas with Green Sauce

The sauce was 5 stars, but felt the flavor of the chimichangas only rated a 3-1/2. I baked them for 10 - 12 minutes at 450 degrees, with no oil added, and the texture was great. Nice and crispy. Very easy to prepare and freeze ahead. simply put the portions of sauce in separate containers from the chimichangas and put the whole thing in the freezer.

Grandmother's Buttermilk Cornbread

My new favorite cornbread recipe. This is moist and sweet enough that we ate it without any butter or jam. It was still nice and moist the 2nd day, too.

Caramel Apple Cranberry Pie

Absolutely outstanding! I discovered I was out of dried cranberries, so used 1-1/4 c. chopped frozen cranberries. I increased the brown sugar by an extra 2 tablespoons to compensate for the extra tartness. Other than that, no changes. This recipe is a real keeper!

Cran-Raspberry Pie

I made this for my son's birthday when I couldn't find Marionberries. It had the same tangy flavor and the color was fabulous. A bright raspberry-red. Very appetizing. I will definitely be making this again.

French Coconut Pie

This was very good. I did cut the sugar back to 2 cups, and will try cutting it to 1-3/4 cups next time, as it was still a little too sweet, and I'd like the tangy flavor of the buttermilk to be a subtle background note. (Remember, the coconut is also sweetened). I also added a teaspoon of vanilla. It was a nice, light dessert, and I will definitely make it again. I used Trader Joe's frozen pie crusts with this and they were the best pre-made pie crusts I've ever found.

Strawberry Cheesecake

Very, very good. Made it a day ahead of time, following recipe exactly, except for the addition of a little cinnamon to the graham cracker crumbs. I baked it in a water bath and was careful not to overmix. There was not problem with cracking. I did have extra strawberry sauce left over, so I think you could safely cut back to 16 oz of strawberries.

Holly's Chicken Cordon Bleu Casserole

On a scale of 1 - 10, this definitely got a 9 or 9.5. It was even better the 2nd day after baking. This was really easy, because I used leftover baked chicken that I had frozen, leftover ham, and sliced swiss cheese. I was short of corn flake crumbs, so compensated by adding crushed Ritz crackers. I cut the parm cheese down by 1/2, and used fat-free soup and sour cream. We'll be making this again and again... it is so much easier than the traditional chicken cordon bleu, and every bit as good. My son is already dropping a lot of hints about wanting me to make this again.

Double Layer Pumpkin Cheesecake

I made this for Thanksgiving and was quite disappointed. As other reviewers have noted, the flavors where kind of bland. Also, it lacked the pretty bright orange of pumpkin pie... the color actually reminded me of cardboard. I'm switching back to my old favorite, a regular pumpkin cheesecake, with gingersnaps and nuts in the crust.

Crab Cakes with Red Pepper Sauce

Like many other reviewers, I used my own favorite crab cake recipe, but did make the red pepper sauce. It was good... quick and easy, but not as outstanding as I would like. A little too much vinegar flavor, maybe.

Grandma Bellows' Lemony Shrimp Macaroni Salad with Herbs

Perfect when made as submitted. My only change was to use fresh shrimp. Next time, I'll try adding chopped avacado, too. This had lots of flavor. I'm not sure why someone had submitted feedback stating it was bland...

White Chocolate Raspberry Cheesecake

I made this for my son's birthday and it was a huge hit. I followed the feedback suggestion to bake in a water bath and let stand in oven after baking. No cracks... Definitely plan to make this at least 24 hours ahead of time.

Mahi Mahi with Coconut Rice and Mango Salsa

This was good, but even though I cut back on the amount of the red pepper flakes, it was a bit too hot for our tastes. The mango was a wonderful cooling accompanyment.

Fresh Strawberry Upside Down Cake

This was very good, although not as good as "Strawberry Angel Food Dessert". I made this because I was curious what happened to the marshmallows. They disappear, and the completed cake has a nicely flavored strawberry puree taste and texture. I only gave this 4 stars because I felt the flavor of the gelatin was kind of strong and a little artificial. Still, a very easy, pretty dessert, and tasted great with whipped cream on top.
