High Temperature Eye-of-Round Roast

I have tried this kind of roast cooking for prime rib only in the past. This method worked fantastic for this lower cost cut of beef. I can't say it was "tender", but cut the slices thin, and it is fabulous for flavour. For 1/4 the price of high end cuts, it's more than a great substitute, & don't be shy to serve to company! . Cooked to perfection med rare according to recipe! Leftovers are going to be great sandwiches or hot beefI I put the raw roast in a zip-loc with seasoning of S&P, Lawrey's, onion flakes & Worcestershire sauce, marinating for a few hours in advance, & I wouldn't be shy to over-season more to your taste preferences. It's all a matter of taste. Definitely will keep this in the arsenal of my favourites and it won't kill the budget.

Maple-Brined Pork Loin

Totally different preparation than I have done before. Excellent.. Very moist, and the juices were so flavourful on the meat afterward and also on the potatoes served along side.

Chicken Enchiladas

Really good dish.. Used left over wild turkey… think any poultry or even pork might work. Used a homemade "Ten Minute Enchilada Sauce" from All Recipes since I didn't have any bottled. This casserole was much better as it sat for awhile.. Wait 15 minutes at least before serving for best results. Really enjoyed this.

Cauliflower-Cheese Soup

Put together with a combination of ideas from other reviewers. Used a 1 lt box of chicken broth, instead of water, and added garlic and onion sauted with the flour/butter. Seasoned with a bit of cayenne, white pepper and a touch of salt (would leave out this bit of salt next time). Lightly pureed about 3/4 of the mixture, and kept some chunks for body. Used a sharp cheddar. Very nice soup, and will certainly make again.

Sherry Sour Cream Chicken

Surprisingly good, and very quick. Also didn't bake as long as recommended, and it was fine. Didn't have fresh herbs, so used dried. Nice flavor. Look forward to trying it again with the fresh herbs. Will keep this one.

Valentino's Pizza Crust

I tried this recipe because it didn't need a lot of rise time. We loved it. It is a lot a dough though - made 2 pizzas with it. I'll definitely keep the recipe, and will do a couple of large thin crusts next time. The dough rose like crazy, so don't be scared to make it thin.

Spaghetti Squash Casserole

Sauteed Swiss Chard with Parmesan Cheese

My 1st attempt at Swiss Chard as we don't get it in our remote area as a rule. Very tasty recipe and I'll do this again. I also may cut back on the butter. I used just a tsp or so of lemon and it was fine. Was a great combination with salmon steaks!

Pork Chops and Kraut

I wished I had sampled the flavor before adding the sour cream, and may have made adjustments. This recipe was a bit strong of caraway - I'd reduce the amount slightly,and use less sour cream, but it was a tasty meal with a nice sharp flavor for a change.

Pork Chops 'n' Pierogies

I nearly lost my husband during the cooking process on this one, (& I wasn't far behind). The smell of the vinegar was overpowering to say the least. The flavor of the overall recipie was just ok -not a winner in our family.

Brandy Flamed Peppercorn Steak

Mixed reviews between my husband and myself. I also added mushrooms, but I didn't have any cream on hand to finish off the final touches. Although I've enjoyed previous peppercorn steams, I found the quantity of peppercorn here a bit overpowering. I'll try another kind next time.

Chicken Broccoli Ca - Unieng's Style

Good recipe easy to substitute. I used peppers, mushrooms and bok choy as veggies. Lots of pepper in the recipe -may have been too spicy for some, but my husband & I loved it.
