Pineapple Bread Pudding

Fantastic recipe. I made it exactly as listed and then added chopped pecans, which provided a wonderful texture, as well as flavor. The pudding reminded me of a pineapple upside-down cake. Will definitely make again, but will reduce butter and sugar each by a 1/4 cup.

Fruited Curry Chicken Salad

I love curry and this was a wonderful idea. I made this a lowfat version by adding only half of the mayonnaise and substituting the other half with nonfat yogurt. Yogurt goes great with curry, so it's a win/win all around. I had no grapes or apples, so dried apricots became my fruit of choice. Staying on the lowfat theme, I left out the nuts and added more celery. Can't wait to have more leftover chicken!

Leftover Chicken Croquettes

This is a great idea for leftover chicken. I spiced it up a bit for my tastebuds by adding sundried tomatoes, pepperoni, and oregano. I added plenty of eggs and let sit overnight. The patties stayed together nicely when frying. The trick is to shred the meat, do not chop.

Microwave Corn on the Cob

Why shuck the corn? I microwave my corn in the husks. The husks act just like the plastic wrap and they will keep the corn hot for quite a while. Also, the corn is easier to shuck after it's been microwaved. The silk just slides right off!
