Pork Chop and Feta Skillet

I'm usually not a big fan of pork chops, but since my husband loves them I have to make them occasionally. I made these tonight, and I LOVED them! The flavors just worked perfectly together, and it was super easy to make. My husband might get pork chops more often now that I have this recipe!

Hot Dog a la Potato

I have to admit I'm not a hot dog fan at all, so this recipe looked disgusting to me, but I had a HUGE bowl of leftover Thanksgiving potatoes, hubby and I were both trying to lose weight, and all 3 kids were sick of mashed potatoes. It was super quick and easy enough to make just for the kids, and they DEVOURED them! My kids usually devour hot dogs, but leave everything else (yet they think a bun is necessary... some kind of decoration, I guess.) They ate the entire thing with these, so they got more well-rounded nutrition out of it too (as well rounded as you can get with a hot dog, anyway!) I think these will be a staple lunch food for my kids whenever we have leftover potatoes!

Vanilla Granola

I made this almost exactly according to the recipe - just added some crushed banana chips for a bit of a fruity flavor (which, by the way, tasted WONDERFUL with the coconut.) I love it! Next time I might cut back a bit on the sesame seeds - they're good, but expensive and 1/4 cup would probably be more than enough. I thought it made a wonderful amount of granola, in fact I made a double batch! If you don't eat cereal every day and have a small household, you might want to halve the recipe, although there are no fast-spoiling ingredients and it should keep just fine for a few weeks. Since I'm making it for a family of 5 that goes through a box of cereal in about 2-3 days, a double batch means I won't have to buy cereal for a week or two! One lady commented that it burned in 30 minutes. I'm wondering if her oven temp was off, because I didn't have that problem at all - 60 minutes stirring every 15 minutes and it turned out perfectly. Maybe cut back a bit if you're layering it really thin and making a smaller batch, but as long as you stir it regularly and watch for it to turn golden brown (like you do in any granola recipe) it should turn out fine. We'll definitely be making this again, trying some other fruit and nut combos to keep in interesting!

Overall good recipe. I love the texture - the granola clumps just enough without turning into a solid mass. The combination of grains and nuts also gives a great texture. However, I agree with other users who say that there's WAY too much salt and not enough other flavors. I love salty snacks, but wasn't a big fan of the salty granola - it overpowered other tastes. If you are used to eating a lot of nutty grains the flavor is perfect if you cut back on salt. I added about 1/2 cup of raisins to give it some natural sweetness. I'll add more dried fruit next time for more sweet taste, especially since I'm making it to share with my young kids who will eat a lot of whole grains only if I mask them with enough other flavors. Definitely a more "grown up" taste with the original recipe.
