Pepperoni Bread

I grew up on this stuff...my grandparents live in Maine and there was a bakery there that made this. It was all the grandkid's favorites. The bakery has since closed done and I have been looking for a good recipe like theirs forever. This is not it. The Italian spice is not nesceasary, but I do like the egg on top, not needed in the middle. I like to buy a box of make it yourself bread mix the italian seasoning inside it along with the parm. Then roll it out, layer the pepperoni side by side and top with a white and yellow chesse combo. It is much better that way and great dipped in Ranch. This is far from the best. However, it is a good base for those of you who have not tried pepperoni bread.

Spicy Brown Mustard Chicken

I love this recipe and so does my picky boyfriend. I add some honey to the mustard mix to add a bit of sweetness. I have also used both stone ground and Dijon and it works well either way. For the bread crumbs I always used ritz type crackers and add classic Italian herbs and grated Parmesan. Which I believe make the best coating. The last suggestion I have is to make cuts into the chicken, just over half way through the breast, and add minced garlic into the slices. It add a nice flavor and keeps the chicken incredibly moist. Oh yeah, and I also leave out the lemon juice because I rarely like the flavor.

Gerry's Chicken Enchiladas

I make this for company and for my boyfriend. i have never had anyone not love this dish. I like to add chipotle bullion cubes to the chicken while simmering and also sprinkle on top. I also omit the hot peppers and replace it with a small jar of Very hot salsa or even better--chopped chipolte peppers. Also prefer diced tomatoes to stewed. Stewed are just too big. I have also done the Chicken simmering in a crockpot and it turns out great! This is the best recipe I have found on this site. Absolutely Love It! And so does everyone else! I have become famous for this dish.
