Boneless Garlic and Rosemary Rubbed Prime Rib with Red Wine Mushroom Sauce

Reviewed: Dec. 14, 2011
I was really disappointed with this. The sauce I made exactly as it said, DH hated it and I thought it was so-so. The meat was ok, a little too rare for me (cooking time was off). I did get it to 140 which is rare (time contraints were an issue). Flavor was just ok for me. Meat was tender though. This is the first 4.5 star recipe I've rated under. I will not make this again.

Fabulous Wet Burritos

Reviewed: Dec. 12, 2011
I followed the recipe except my sauce was just the enchilada sauce with the canned tomatoes. I thought it was really good. I only gave 4 stars because it did lack a little "pizzaz" but everyone (kids & DH) liked it. Of course I love enchiladas and this is a little similar. It's easy and versitile, you could add whatever into the filling (peppers, shrooms, spicy things, chopped carrots & celery). I didn't this time but I will, I like to sneak in veggies for my family. Will for sure make it again.

Scalloped Potatoes and Onions

Reviewed: Oct. 23, 2011
This is my go to scalloped potato recipe. I've made it many time and it always tastes perfect, usually I add cheese too. It has taken way longer to cook almost every time I've made it but always gets rave reviews. During a large dinner for guests (Easter I think) I made it and let it cook the whole day in the crockpot. Kept my oven free and worked like a charm... even got the crispy bits on the outside. :)

Gourmet Mushroom Risotto

Reviewed: Sep. 18, 2011
Fabulous... amazing. I was SO proud to serve this. Followed the recipe to a tee... 100%. TO MAKE THIS DISH AHEAD I did some searching online and it was perfect! I cooked all of the liquid except the last 2c. just before my guests arrived. As our steaks were nearly done I finished the cooking quickly. Was perfect. I would imagine you could put it in the fridge and add the last 2c (may need a little extra liquid this way.) I can't wait to make this again!

Jacky's Fruit and Yogurt Muffins

Reviewed: Sep. 13, 2011
Easy and delicious. The 'batter' is more like dough. I used fat free greek yogurt (it was thick I had to add a bit extra) and blueberries. This is going into my library.

Cheddar Bacon Hamburgers

Reviewed: Jul. 4, 2011
Best burgers I've made yet. I made them as written except instead of bacon bits (didn't have any) added two slices of finely chopped bacon (raw) and omitted salt. Served them to guests and they raved. Flavor was outstanding. This will be my standby recipe from now on.

Beef Taco Skillet

One of my fave easy super fast family dishes. I usually add a bunch of chopped veggies (think peppers/zucchini) to add bulk & nutrition. Delish!

Cottage Cheese Chicken Enchiladas

Reviewed: Jan. 19, 2011
Excellent. I was apprehensive because I've always made enchiladas with a creamy sauce (light sour cream & light cream of something soup). These were healthier and so muich better. The only thing I did differently was add some chopped peppers & grated zucchini to the onions to make it healthy for the kids. Was a for sure hit all the way around!

Low Fat Buttermilk Ranch Dressing

Reviewed: Aug. 8, 2010
By far the best I've had. (I used Hellmann's Cholesterol Free Mayo, doesn't have that "sweet flavor " like low fat miracle whip). A definate keeper.

Overnight Cinnamon Rolls I

Reviewed: Nov. 15, 2009
Easy and delicious. Made them last night. I used quick rise yeast and skipped the first rise. Took them out of the fridge this morning and they hadn't really risen so I worried I'd ruined them. They rose beautifully in the oven. I flipped the pan over & let them cool a bit. Other than that... followed the recipe exactly.

Tasted good... recipe, not so good. The dough was sticky and I had to add waaay more flour than called for. If I hadn't they wouldn't have turned out. I had to give only 3 because the recipe couldnt' be made as written.

Zucchini Brownies

Reviewed: Sep. 16, 2009
The batter seemed strange and dry, so I reviewed the recipe. I had followed it exactly .. I was pretty worried. Baked 'em and they looked ugly. Iced 'em... they looked good. Ate 'em... tasted ABSOLUTELY devine. Not a hint of zucchini... so so yummy. A for sure and a super way to use up zucchini.

Clone of a Cinnabon

Reviewed: Feb. 7, 2009
AMAZING! OVERNIGHT directions: Prepare as in recipe. For second rise cover in plastic wrap and place in fridge overnight. Remove from oven 1 hour before baking and bake as directed. I did not use my bread maker, just mixed as directed. To me they tasted just like a cinnabon, found our new Xmas morning recipe.

Chicken-Fried Chops

Reviewed: Oct. 13, 2008
I would give this 4.5 because it was really good but I had to give it 4 because 2 out of 3 of my kids didn't care for it. I served it over brown rice. I will make it again, and I will make them eat it. :)
