No-Noodle Zucchini Lasagna

This was excellent!! I followed the recipe but had to make some changes. I followed other reviewers & baked the sliced zucchini in the oven for 10 mins at 350. I used sweet red peppers as I didn't have green & canned mushrooms as I didn't have fresh. I used a jar of spaghetti sauce as didn't have plain and dried herbs as didn't have fresh. None of these changes made a difference. This was absolutely wonderful and definitely a keeper!!

Salmon Cakes II

Great way to use canned salmon! I changed only a few items. Added crumbled bacon & since I didnt have bread crumbs used crackers.. all I had were 'smoked chipotle' crackers. I didn't sprinkle flour on the cakes but used parmesan cheese. Excellent!

Mediterranean Summer Tomatoes

Great change up for home grown tomatoes instead of just salt & pepper! I didn't have balsamic vinegar so had to use apple cidar. sprinkled with s&p. I used a suggestion from someone else and crumbled blue cheese on the tomatoes. marinated for 15 minutes and continued to "flip" the container. it was excellent!! after dinner, I added more tomatoes and blue cheese to the container for tomorrow and put in the frig! can't wait to have more. Thanks Scarlett!

Easy Chocolate Mousse

Excellent starter recipe! Looking through all the other reviews, I decided to make some adjustments too. I tripled the recipe so 3 boxes pudding (which should require 4 1/2 cups milk) but I used 2 cups white milk and 2 cups chocolate milk, and added 1/2 cup chocolate syrup. Mixed this up and placed in the frig to firm up. About 1 hour before serving I folded in 8 oz cool whip and place back in the frig. This was nice and thick and very yummy!! Will definitely make again!

Flavorful Flounder

Awesome! I marinated the flounder in lemon juice & bay seasoning for 1/2 hour then grilled as stated. I also sprinked some bread crumbs w/bay seasoning on top of the cheese mixture. Wonderful flavor. definitely a keeper!
