This will be my go to recipe for Banana Muffins. I did, however, modify it. In lieu of adding butter, I used 3/4 cup of Light Olive Oil and added chopped Walnuts, as well as adding a bit of Brown sugar to the batter for a bit more sweetness. They turned out very moist and perfectly sweet (for my taste anyway). I will, however, try a 1/2 cup of the Light Olive Oil next time to see if that works. I always like to try and save calories here and there without compromising flavor or texture. I think they can be just as delicious.
