Blueberry Muffins II

Reviewed: Jan. 12, 2014
I loved these muffins! It was easy to make and tasted delicious. I read that other people were having a hard time getting them out of the pan so I just baked them in muffin papers so I did not have to deal with that issue. These are definitely muffins that I will be making again.

Crazy Crust Pizza Dough

Reviewed: Dec. 16, 2013
This is my first attempt making yeast-less crust. I probably would never have tried it if my roommate wasn't allergic to yeast. I thought the recipe was decent although maybe a little to be desired. It was rather flat (although I guess I should expect that when no yeast is added) and a bit rubbery (due to the eggs) but overall it wasn't bad. I'd say it isn't my favorite recipe but definitely one worth making again when it comes to yeast-less crust.

Chocolate-Chocolate Chip Bacon Cookies

Reviewed: Mar. 20, 2012
These were a hit! I made them in the dorm and everyone who was brave enough to try them absolutely LOVED them! Not only is bacon amazing, but the recipe for the cookie itself is absolutely wonderful - moist and tasty!!

Peach Coffee Cake II

Reviewed: Dec. 21, 2011
Very delicious! I cut the recipe in half because I wasn't sure the family would like it but after it came out of the oven it was clear that this is definitely a must make again type of recipe! The only thing I did differently was use canned peaches and sprinkle a little bit of cinnamon and sugar on them before spreading the rest of the batter on them. Will have to make sure the peaches are drained a whole lot better next time as it was still a little doughy/soggy in the middle. Extending the cook time a little bit might also help? Either way, a great recipe and an instant family favorite. Thanks!!

Slow Cooker Beef Stew II

Reviewed: Apr. 15, 2011
Very quick and easy. I used 1 can of cream of chicken and 1 can of cream of mushroom and then added some onion powder to the stew meat. It was quite tasty over macaroni noodles. Was a perfect meal for a busy day. :) I will most likely be making this again in the future.

Chicken Salad Sandwiches

Reviewed: Feb. 22, 2011
Very good!! I loved it! I had never made chicken salad before and it was a hit! The only thing I did different was omit the almonds and olives and chopped up a sweet pickle and added some of the juice instead of the relish. Definitely on my "make again" list. :)

Absolutely Ultimate Potato Soup

Reviewed: Feb. 21, 2011
Not bad. I didn't have cilantro and I diced up a hot sausage link instead of bacon. I also added a carrot. Very flavorful.

French Toast Bake

Reviewed: Feb. 4, 2011
I made so many changes I'm not sure exactly how I should rate it. To rate it according to how mine turned out with my substitutions would give it poor rating. I didn't have french bread. Used Oat bread instead. Didn't have pecans or blueberries so I didn't add them. I didn't add quite as much liquid and I haven't a clue how long I left it in the oven. All in all, it turned out alright. Not the best. But still eatable. I think it would be just as easy to make regular french toast as it is to make this - of course, if you don't have time to stand over the stove then this would be the better option. Having the correct ingredients would help too.

Easy to Remember Pie Crust

Reviewed: Jan. 28, 2011
Makes a great pie crust. Definitely need to refrigerate before rolling out. I find its nice to make up a bunch, roll them out and then roll up on a piece of plastic wrap, place in a zip-lock bag and freeze until needed. Saves lots of time when needing a pie crust. Just pull out 30 minutes before you need it so it can defrost.

Best Ever Chicken Casserole

Reviewed: Jan. 28, 2011
I give it three stars because I added a lot more ingredients to make this more interesting. I added some chopped celery and carrots, threw in some green chilli's, and threw in some cooked macaroni noodles to help stretch it (didn't have as much chicken as called for). Over all, it turned out real well. It is not an absolute favorite but it can be eaten and enjoyed. Will probably make it again although there is nothing "wow" about it. I did, however, like the use of the water chestnuts. Gave it a nice crunch.

Taco Pies

Reviewed: Jan. 22, 2011
Not too bad. Definitely needed some extra things to liven it up a bit though. Used taco seasoning on the meat and added a small amount of salsa to the whole layering process. gave it a nice little kick which was just what it needed. I also cooked the crust the full cook time instead of half. Was easy and turned out real well. I like the variation to regular tacos.

Miss Betty's Super Quick Dinner Rolls

For a quick roll, very good. Love the light and fluffyness of it. Needs a bit more flavor but that's easy to fix by tossing in a few spices.

One Skillet Pork Supper

Reviewed: Nov. 18, 2010
good for if you are in a pinch. Very fast and easy although a bit bland. I didn't have tomato soup so I used a can of spaghetti sauce and added some water. I also had some precooked pork in the freezer that shredded up real nice to turn this dish in to a stew. Not the best I've ever had but still good and great when short on time.

Garlic Bread

Reviewed: Oct. 7, 2010
Not really my favorite. I cut down the serving size to 11, added extra garlic (possibly a little too much??) and I didn't have the chives so i didn't put those in. The bread was ok, a little bit on the dense side. Don't think I put enough yeast in it and that might be why. Overall, it's not bad tasting. Just not my favorite and probably won't be making it again if only for the reason that I have other types of bread that I enjoy more.
