Sweet Potato Pie I

It was my turn to do the birthday baking in the office and the birthday boy requested sweet potato pie! I found this recipe and he has been raving since he cut the first slice! Called it "Like Grandma used to make!" and he is not sharing at all. I did tweak it just a bit by using heavy cream instead of milk and substituting ginger and clove for nutmeg since it was what was on hand. I will totally be making this recipe again! Maybe this time with the lower calorie milk!

Bacon Chicken and Dumplings

I cheated with canned chicken and bacon bits, but my family LOVED it! My boys fought over the last bowlful with the loser shouting "Meanie!" at the winner. My husband says the bacon really adds something to the flavor. Just hearing that I'm making it makes all three of them excited!

Baked Doughnuts

This was quick, easy, and delicious! No standing over a dangerous frying pan of oil, just pop in the oven and chow down when the timer goes off! My 9-yr old talked me into making a chocolate frosting (powdered sugar, chocolate powder, milk) as his favorite at the donut shop is chocolate frosted. He came back for more without the frosting!

Chocolate Zucchini Bread II

My 8-yr old LOVES this! We make it as muffins to make it easier for him for breakfast and snacks. He loves to help me make it and then burn his tongue eating them as soon as they come out. We use steamed and pureed zucchini and cut out the oil all together.

Fluffy Pancakes

Quick and easy breakfast and the kids gobbled it right down! I'll need to double the recipe next time as the first kid to get pancakes almost cried when none were left for seconds!

Light and Creamy Brown Sugar and Chocolate Frosting

I had used up all my powdered sugar on Christmas Eve and needed more to make frosting for the next morning's cinnamon rolls. And this recipe rode to the rescue! It was quick and easy and included the ingredients I had on hand. Very yummy!

Jane's Ham Puffs

I skipped the mushroom sauce because I knew the kids would turn up their noses. They loved it and never knew it once had mushrooms! It was quick and easy to put together and made great use of the leftover Christmas ham. My husband even had three servings he enjoyed it so much!

Citrus Chicken and Rice

Reading others say it was a bit dull, I threw some garlic, sage, a tiny pinch of rosemary and just a splash of worshishire sauce. My kids' only complaint was the onion chunks. Otherwise, they gobbled it down! The base recipe is a wonderful start and I think the orange really adds to the flavor and moisture of the chicken. I will be adding this to our favorites to try again!

Ninety Minute Cinnamon Rolls

A wonderful way to start the day! I'm rather inexperienced with making these, so I ended up leaking the filling all over the counter, but the end result was still delicious! I make a cream cheese frosting to top them and the kids AND my husband gobbled them up! I would recommend putting an extra pan under the muffin pan to catch the drippings as the butter did drip all over the stove.

White Ranch Macaroni

I had leftover asiago cheese from lasagna, so I did a search and found this recipe. I figured my husband and I would be eating it for the next week because our kids can be VERY picky. I was shocked when they went back for THIRDS! I used regular ranch instead of garlic ranch and also used heavy cream (to get it out of the fridge after another baking project) but otherwise pretty much followed it. Very yummy!!!

Buttermilk Pancakes II

LOVE this recipe! I usually cut out the extra 1/2 cup a milk as it makes it too watery to me. Unless I'm using whole wheat flour, then it needs the extra 1/2 cup milk. I usually make it at least one weekend morning and the kids just LOVE them! Also good with 1 cup chocolate chips for a special treat!
