Sister Schubert's® Chicken Pot Pie with Bread Topping

With all due respect to Sister Schubert's dinner rolls, I much prefer this with a puff pastry sheet as the crust. It's really no harder to make a lot, than a little, so I make it in a double or triple batch, freeze the extra filling and assemble with the puff pastry when I pull it out for a relatively easy meal down the line. I've used any number of different vegetables in the mix, and everything I've thrown in has worked well. This has become a standard in our dinner rotation and one of my favorites.

Cranberry Orange Relish with Orange Flavored Liqueur

This has become a real holiday tradition for us. The basic recipe is wonderful as is, but I usually reduce the sugar and add a drained can of crushed pineapple (in juice, not syrup). I've used Triplesec and Grand Marnier. In my opinion the GM is better, but either is good. I've added nuts, chopped apples, and just about anything else that struck my fancy. As the kids would say, "It's ALL good!!'

Fig and Lemon Chicken

I'll give it at least a Four. I made it as written, except that I used fresh figs. We have a gargantuan fig bush/tree in the back yard, and I needed to find something to do with all that fruit! I just covered the bottom of the baking dish with figs and assembled everything else on top. It was quite yummy, and the leftovers were even better! We will definitely do this again while the figs are coming. Thanks Kimber :-)

Old Time Chicken Divan

This is essentially the same recipe that I found in my dad's Southern Living collection from 1980. The highest compliment I can offer is that, at about age 8, our very picky son realized what I was cooking for dinner and responded with, "Oh! YIPPEE!!!" I am happy to see that this wonderful dish lives on. I think I'll make it this week.

Chicken Tagine

This one was a true hit! I was looking for a way to clear out some items in the fridge, freezer and pantry and came across this recipe. The only thing I had to buy was the eggplant. I made the recipe as written - except that I used whole, bone-in chicken thighs (skin removed) - and it was delicious. My only comment is that the recipe says it serves 8. This is either optimistic or based on very light eaters. I served 5 adults and had less than a serving left over. I also made extra couscous for soaking up that incredible sauce. yum, Yum, YUM!

Paprika Chicken with Mushrooms

I came across this recipe when I was in a mental melt-down about what to cook for dinner. I worked in most of the suggestions added by naples34102 and got raves from the family. It came together easily and quickly and looked great on the bed of sauteed spinach. This one definitely goes into the rotation. There's nothing exotic in it, but it tastes great and is pretty enough to serve for company.

Alaska Salmon Bake with Pecan Crunch Coating
