Broiled Spanish Mackerel

This was very tasty. The lemon and the paprika work very well with Spanish Mackerel. My only problem was that I could not get the fish to cook completely under the lemon. I ended up microwaving the fish, in 30 second intervals, for about a minute to complete the cooking after I had broiled it for about 7 minutes. Because of this, I am only giving it 4 stars.

Roast Sticky Chicken-Rotisserie Style

I made this for a party the other day. It turned out unbelievably juicy and tender. I decreased the amount of paprika and cayenne pepper, fearing it might be too spicy, which was a mistake, it would have been more flavorful if I'd used the recommended amount.

Key Lime Pie VII

This pie was really good. I decided to make the crust from scratch using a recipe from this site. It took about 20 limes to make 1 1/2 cups juice - believe me that was the hardest part, squeezing all those limes! Someone on this site suggested using a garlic press and smooshing each lime half into the press and squeezing it that way, that worked very well. Everyone asked for seconds on the pie, it was a big hit!

Graham Cracker Crust I

Super easy and very tasty. Used low fat honey grahams, which I crushed in a plastic bag with a rolling pin (I was surprised at how much work that actually required). I used about 12 full crackers (with 4 sections each) to get 1 1/2 cups of crumbs. Made a very nice shell for my Key Lime Pie.

Best Chicken Pasta Salad

This was absolutely delicious, but I did make some changes. I used Lowry's steak marinade on the chicken and let it sit or a few hours before broiling in my oven. I cooked the pasta with beef bouillon instead of chicken because that is what I had on hand (I will be making pasta with bouillon again, it was surprisingly good). I used a few shallots instead of the onion. In addition to the listed ingredients I also added chopped cucumber, chopped flat parsley and basil from my garden. Made a huge amount of food, but I'm glad to have the leftovers.

Oklahoma Cheese Grits

This was absolutely delicious! I changed the recipe to serve 4, and followed it exactly, except I substituted shredded sharp cheddar cheese for the processed cheese cubes. It came out unbelievably rich and tasty.

Chicken Pasta I

I cut the recipe in half and made it for hubby and myself for dinner tonight. I used a couple of pre-cooked chicken breasts and cubed them, as directed. I also used twice the required amount of tomato, 2 cloves garlic, chopped red pepper, and more onion and mushroom than required (I didn't measure), I substituted tri-color, twisted pasta for the mostaccioli. The results were quite yummy. Hubby had 2 full servings and rated it 7 out of 10, I'd give it an 8 out of 10. Next time I'll use even more mushrooms. Definite winner!

My Best Clam Chowder

Very good! I recalculated the recipe to serve 4 instead of 8 and made a few modifications. I decided to cut calories and fat by using fat free half and half and cutting back the butter and flour mixture by a few tablespoons. It still came out extremely rich and thick, to the point where I added some skim milk at the end to thin it out. Like others, I cooked up some bacon - turkey bacon in the pan before cooking the veggies and clam juice. Like others, I also used all clam juice instead of water. Next time I will use even less butter and flour and twice as much clams.

Incredibly Cheesy Turkey Meatloaf

I followed the recipe exactly, except I used a combination of low fat sharp cheddar and low fat colby cheddar cubes. I also substituted KC barbeque sauce for the ketchup. Next time I will use milder cheese and mix some barbeque sauce in with the meat, because it was a little bland the first day, but much better the second day.

Broiled Tilapia Parmesan

I made this for the second time, I forgot that I had made it before. I only gave it 3 stars the first time and I have no idea why. I found it delicious and followed the recipe almost exactly (I didn't have celery salt and used seasoned salt instead).

Death by Chocolate Mousse

I used a ready made chocolate pie shell, but followed the recipe exactly aside from that. My gosh it was FABULOUS! I served it at Christmas dinner and people had second and third helpings of it. It is incredibly rich, yet light. My husband asked me to make it for his birthday next month instead of cake.

Slow Cooker Sauerkraut and Sausage

I followed the recipe exactly and found it to be OK, but nothing special. It would have been better with Kielbasa and I think rinsing the sauerkraut and using more sugar would have helped too.

Baked Slow Cooker Chicken

I made this a couple of times. First I followed other people's ideas, filling cavity with onion, lining crock with carrot, celery, onion, adding some stock. This gave me chicken stew and was not wonderful at all. Second time I followed the directions and ended up with a yummy chicken, perfectly tender. Very easy, I'll make it again.

Cinnamon Bread I

I have made this several times now. Like others I mixed the dry ingredients and moist ingredients separately and then combined them. I also tripled the struessel, filled loaf pan half way, swirled in half, filled the rest of pan and swirled in the rest of the struessel. Fabulous!

Savory Mushroom-Barley Soup

Absolutely delicious, low fat recipe. I made a few changes: I didn't have celery, so I used fresh red pepper instead, I added garlic, I have tons of home grown tomatoes and I used them, instead of tomato paste. I used baby bella and shitaki mushrooms, this was particularly important because they give less water than button mushrooms, but since I didn't use tomato paste I figured that would be fine. I used a bunch of different fresh herbs (didn't measure) from my garden, including basil, Italian parsley, oregano. Also, I added some cooked, chopped chicken. I almost forgot, prior to adding the chicken I used an immersion blender lightly, just to thicken things a bit more, but left the whole thing very chunky. The result was a soup that was a low fat, low carb meal! Thanks for the recipe.

Best Brownies

These are the best brownies I have ever had, and I've had a lot of brownies. Just the right balance of cake to fudge texture. I say this even though I cheated on the recipe. I doubled it and baked it in a 9x13 pan, but I substituted 1/2 the sugar with granulated Splenda, 1/2 the butter with apple sauce, and half the eggs with egg substitute and it still came out fantastic! I did not find that adding milk helped the icing problem, however 20 seconds in the microwave made it possible for me to make a decadent, smooth icing.
