Mexican Chicken Quinoa Salad

Followed the recipe as written with the exception of adding the whole bell peppers. I made this up the night before, waiting to add the avocados then next day when I served it. I make with my own taco seasoning blend adapted from 'Famous Taco Seasoning Mix' on the AR website. The carrots and celery were very crunchy right after I made it and didn't seem to go with the Mexican flavor, however the next day they had softened up and the whole salad tasted much better, so letting it marinate awhile is a good idea. I ended up adding some cilantro since I had some on hand, a nice addition. This sure is a chock full of healthy stuff salad. ?

Crunchy Pineapple Smoothie

This was a great before a workout smoothie, light and refreshing with just the right natural sweetness and tartness from fresh fruit. You don't taste the green tea at all, but benefit from the extra boost of energy and not to mention health benefits green tea has. If you are looking for a filling breakfast smoothie to hold you over until lunch, I'd toss in a banana or handful of oatmeal. If you like sweet smoothies add some honey or agave nectar. I did hold off adding the whole cup of tea, and liked the consistency of the smoothie at a little less than 3/4 cup. I'm not sure why it is called crunchy, unless you add ice, mine was pretty smooth.

Scott's Grilled Salmon

This fish was so easy and so amazingly good. I had three 8.5 oz. fillets, so I just mixed up the marinade in a measuring cup and poured a little bit onto each fish while in sitting on their sheet of foil. I then sprinkled the Old Bay, salt and ground pepper, some minced garlic, and the teaspoon of capers, topping each with two lemon slices and a sprig of garden fresh rosemary. I then sealed all edges well into a pocket leaving room for the steam to expand. I also let the fish marinate in the foil packets for 30 minutes before cooking. I only made half the sauce since I could only get a tablespoon of lemon zest from my two lemons, but it was plenty for us. I just added about a teaspoon of minced rosemary and teaspoon of olive oil, a tablespoon seemed a bit much for our taste. I wasn't sure I'd like the sauce, but boy it sure was wonderful on the fish. I really wouldn't want to smother the fish with it since the fish was so refreshing even without it. We cooked on gas grill at 400° for 16 minutes and ate them right in the foil packets. This is going on our summer grilling rotation.

Savory Spanish Potato Salad

I could not find small sized red potatoes, so I just cut up one pound of red potatoes into bite sized pieces and boiled them about ten minutes. I know it isn't as pretty but it sure did taste wonderful, and was very easy to prepare. I did use white wine vinegar since my potatoes were cut already. We all loved this and such a nice refreshing change from the mayo potato salads.

Quick Taco Salad

When the weather gets hot this is one our favorite quick easy meals, each person can put their own favorite toppings on top. I like mine on Doritos, while the other half likes the Fritos. I made the 'Avocado Ranch Salad Dressing' from this site for the dressing this time, usually we just top with a dollop of sour cream.

McDonald's® Tartar Sauce Copycat

Mmmm...so good. I've never had Mc D's tarter sauce to compare this to, but this was so good you could just eat it with a spoon and forget the fish. I didn't use a blender, I just finely chopped my capers and sweet onion. Just squirted in my dill relish from the bottle, didn't need draining. I mixed it all together with a spoon in a small bowl and it was the perfect consistency. I realized after I ate this that I forgot the sugar, didn't need it in my opinion, but sure the hubs would like the sugar. I did add a few turns of ground black pepper for my own taste preference. I've never added capers to my tarter sauce, sure does take tarter sauce up a notch. Thanks for sharing Duboo.

Amazing Mexican Quinoa Salad

I've never had quinoa before, but surprised how much we all really liked this. I followed the ingredients as stated for 8 servings, but changed the dressing to 6 servings. Maybe if you're making 24 hours in advance you'd need that much dressing, but it was very nice and moist after four hours of marinating, as you can see by my photo. This salad presents very nicely and would be great for company or potlucks. I served with some cherry tomatoes and avocado slices which eventually got mixed in, a nice addition to a Mexican salad.

Spicy Chicken Fajitas

We all enjoyed these fajitas, I did marinate my chicken overnight and my husband grilled the chicken, there really wasn't enough marinade to cook on the stove top to baste (believe me I tried), but the chicken was still tender and juicy. We did use some salt and ground pepper for more flavor when grilling. I didn't have lettuce but cheese and green onions made a great substitute. I would suggest some garlic and pepper to flavor the vegetables while simmering. We've been getting some summer like weather and already feels too hot to cook in the kitchen, so this was a perfect easy meal for a night like that.

Easy Black Bean Taco Salad

Such an easy salad for a quick dinner on a warm night. Cooked my black beans in with my ground beef and didn't need as much water as called for. For a great dressing try the avocado ranch dressing on this site.

True Cheeseburger Pizza

Used my own pizza dough, we grilled them on the gas grill, since too hot for the oven. Everybody said, "It taste just like a cheeseburger"...must have been good because four of us ate the whole two pizzas. Fun meal, thanks.

Jan's Simple and Tasty Egg Rolls

I've made these egg rolls a few times now, didn't realize the recipe had been published. I've made them with just veggies, chicken and shrimp. I don't have a deep fryer, so fried them in a pan and usually bake them. I bake them on my stone pan at 375° for 25-30 minutes, until the start to turn golden brown. I do brush them with vegetable oil first.

Lots O'Veggies Sausage Spaghetti Sauce

I halved the recipe, and used fresh spinach and orange bell instead of red since that is what I had on hand. Just toss the spinach in in towards the end of cooking until wilted. This makes a nice chunky sauce, just the way we like it.
