About this Cook
Now that my husband and I are retired, we have really been enjoying cooking meals together...well he does the grilling and I do the rest :-). We especially love cooking and entertaining outdoors and living in Central Florida allows us to do that all year long. We have two grills and a smoker and have tried just about everything on a grill at least once.
My favorite things to cook
I love to eat and cook just about anything, but would have to say Mexican food is my passion...nice and spicy. However, I love colorful food, with lots of fresh veggies, so anything I can get a bunch of fresh herbs and veggies in will be on my menu.
My favorite family cooking traditions
We did a lot of camping when our boys were growing up and all of us sitting around the open fire pit cooking dinner are my fondest of memories. Thanksgiving might by the popular family tradition, but I enjoy the relaxation of backyard BBQ's with the family...and you can do that more than once a year!

Caramelized Onion and Horseradish Smashed Potatoes
I've been wanting to try these for sometime now, so when my husband came home with one of the biggest yellow onions I've ever seen I knew this was the time to try it. I knew we all would love them since we love all the ingredients. I did use milk and sour cream, since I didn't have any half and half, but they were still wonderful.

Baked Chicken and Zucchini
Used my cast iron pan to cook and bake in, just remove chicken to a plate while sauteing the vegetables and then adding back. I did add in onions, mushrooms, more garlic and herbs for flavor. Topping tomatoes with fresh basil. I only used 3 zucchini and made zoodles instead of slicing, just mixed them into the sauteed onions, mushrooms and didn't really pre-cook, just warmed them up. Layered in the cast iron as directed, covered with foil and baked 25 minutes at 360° over in-direct heat on the gas grill. Delicious all in one pan meal, we all loved it.

Quick Pickled Jalapeno Rings
My peppers are very hot this year, so I added one more tablespoon of sugar to tone the heat down. I also added in a bit more garlic. My peppers must be smaller, 14 filled a pint jar. I waited two weeks before reviewing the taste and even had some of the family over to help out with the taste testing. They're still pretty hot, so the sugar didn't tone the heat as much, they didn't taste real sweet either, so that was good. They sure are better than store bought and all agreed this is five stars, for ease, taste and freshness. Must have been good, they ate almost half the jar.
