About this Cook
Now that my husband and I are retired, we have really been enjoying cooking meals together...well he does the grilling and I do the rest :-). We especially love cooking and entertaining outdoors and living in Central Florida enables us to do that all year long. We have two grills and a smoker and have tried just about everything on a grill at least once.
My favorite things to cook
I love to eat and cook just about anything, but would have to say Mexican food is my passion...nice and spicy. However, I love colorful food, with lots of fresh veggies, so anything I can get a bunch of fresh herbs and veggies in will be on my menu.
My favorite family cooking traditions
We did a lot of camping when our boys were growing up and all of us sitting around the open fire pit cooking dinner are my fondest of memories. Even though most people would say Thanksgiving dinner is their favorite family cooking tradition, I still have to say I enjoy the relaxation of backyard BBQ's with the family...and you can do that more than once a year!

I've never really had the so called sweet tooth...I'm a cook not a baker. So most my tragedies usually involve baking something.

Caribbean Nachos
The many reviews that added black beans sounded pretty good and I wanted it to be filling, because it was our dinner. Since my shrimp was raw and large, I cut it in more bite sized pieces, put the pineapple pieces in the cooking sauce first until they were tender, mixed in the drained black beans and then added in my shrimp until it was just starting to turn pink. I then drained the liquid off very well in a strainer, and spread that over the veggie mixture. A trick I've learned to keep your nachos from being soggy is to put most the shredded cheese on top of the chips, then top with the veggies since they need the heat to cook, and putting a thick layer of cheese on top of all your veggies traps the moisture and chips soak it up. Throw more cheese on the top the last minute or so of cooking until it all melts. Your chips stay crunchy. My son said this was the best nachos he's ever had, and he is 25 and eats out a lot with friends. Both my husband and I thought is was a fun summer meal, and it was very filling. All this covered a 15X10 pan, and half of a second pan...so it makes a lot.

Spinach Salad with Warm Bacon-Mustard Dressing
The guys really raved about this one. I read through the reviews and I'm not a fan of overly vinegar dressings, so I did reduce the vinegar a bit, glad I did, for me it was still very prominent but once in the salad, it was fine. All the ingredients of the salad go very well together, the amount of Swiss cheese can easily be reduced, we just topped our salad with it. We grilled some chicken that marinated in a honey mustard sauce and threw that in the salad also...a nice filling summer meal in one dish.

Blueberry Walnut Salad
Outstanding salad. I love fruit and green salads, had to use baby spinach since I didn't have enough Romaine lettuce. I took the advice of the recipe submitter and added in some sweet red apples and red onions, a very nice addition. I used the Raspberry Vinaigrette Dressing By: JAN W on this site for the dressing.
