About this Cook
Now that my husband and I are retired, we have really been enjoying cooking meals together...well he does the grilling and I do the rest :-). We especially love cooking and entertaining outdoors and living in Central Florida allows us to do that all year long. We have two grills and a smoker and have tried just about everything on a grill at least once.
My favorite things to cook
I love to eat and cook just about anything, but would have to say Mexican food is my passion...nice and spicy. However, I love colorful food, with lots of fresh veggies, so anything I can get a bunch of fresh herbs and veggies in will be on my menu.
My favorite family cooking traditions
We did a lot of camping when our boys were growing up and all of us sitting around the open fire pit cooking dinner are my fondest of memories. Thanksgiving might by the popular family tradition, but I enjoy the relaxation of backyard BBQ's with the family...and you can do that more than once a year!

Honey-Garlic Slow Cooker Chicken Thighs
I had 8 bone in thighs, took the skin off and even reduced the amount of soy/ketchup and honey to 1/4 each, also added in some brown sugar. I really didn't measure but certainly didn't need the amount of sauce called for. It just covered the thighs. Sprinkled the chicken with ground pepper, onion powder, paprika, dried basil, oregano and parsley. Then a few dashes of Siracha sauce in the liquid mix, poured over the chicken and cooked on low for 6.5 hours. It was perfect tender tasty chicken.

Grilled Onions and Potatoes
We grill potatoes often with cheese and onions, but have never tried it coated with mayonnaise. I did half the amount of mayonnaise after reading another review, and it was plenty. I liked how the mayo kept the potatoes from drying out and you don't notice the mayo taste and yet still gave a nice flavoring. I only had red potatoes on hand and they cooked up nicely in the 30 minutes, we set our gas grill on 400° and cooked on indirect heat.

Zucchini Parmesan
I think there is way too much sauce for the amount of vegetables in this, so the outcome is a pan of vegetable spaghetti sauce. I even added more vegetables than called for. It really tasted great, with my added Italian spices, but you need some noodles or rice with it. I layered it also like a lasagna and still came out with a pan of spaghetti sauce. If you want a casserole type dish, then reduce the sauce. If you make it as specified put some layers of no-bake lasagna noodles in it, or plan to serve it over pasta.
