Yummy Sweet Potato Casserole

Reviewed: Nov. 22, 2012
Fantastic!! My whole family (who normally likes marshmallows on their casserole) raved about this! All I did differently was roast the sweet potatoes for about 1.5 hours and squeeze them into a measuring cup. I measured 4 cups of cooked potatoes and then made the rest as is! WONDERFUL!! Thank you for sharing this!

Venison Cheddar-Jalapeno Summer Sausage

Reviewed: Feb. 25, 2011
When you roll into logs, you have to pack tightly or you will get air pockets. That's probably why casings and sausage stuffers work so well because you can get the typical summer sausage consistency. I like the flavor, but will probably use casings next time to get a better consistency.

Buttermilk Pie IV

Reviewed: Feb. 1, 2011
I loved buttermilk pie growing up, so I made this for Thanksgiving Dinner. When I went to get a piece of pie, it was gone! Everyone loved it. Since then, I've made this about 5 times. I think sprinkling cinnamon and sugar makes for a more appealing crust on top. I've also made a homemade crust and storebought. You cannot tell the difference, so I will use storebought! I dust the crust with flour before putting in pie plate as the box says to keep it from getting soggy.

Tiramisu II

Reviewed: Oct. 25, 2010
Wonderful! I made this for my dad's birthday, and he said it was better than any tiramisu he had ever eaten! I couldn't find mascarpone or lady fingers. Made Lady fingers from this site, and substituted 2 Pkgs Cream Cheese, 1/2 Cup of Heavy Cream and 5 Tablespoons of sour cream for Mascarpone. That substitution worked great!

Orzo with Parmesan and Basil

Reviewed: Oct. 19, 2009
Excellent, followed recipe exactly. It needed a little salt, but amount would change depending on the saltiness of the parmesan. Mixed leftovers with spinach and mushrooms, and made a great meal!

Tiramisu Layer Cake

Reviewed: Oct. 19, 2009
Cake was excellent, very light. I divided the cake mix into thirds using my scale, and made 2/3 of the cake with coffee instead of water as called for in the recipe. That dissolved the granules much better! Used M84Michael's review for frosting-- "level 6 for the first 3 minutes then level 8 for 2 minutes in a cold kitchen aid mixer." It was perfect! I don't think the pirouettes were worth the money. The cake is pretty without them if frosted immediately. Plus the cake gets better over time, while the pirouettes just get soggy! If you do use pirouettes, you need two canisters, or to cut the pirouettes in half, which will be a little shorter than the cake.

White Cheese Chicken Lasagna

Reviewed: Jul. 27, 2009
Very good! Taste the sauce when it is done cooking. This is where the flavor comes from. If it needs salt/garlic...etc, add it towards the end. I did not and it really needed some salt.

Avocado Ranch Salad Dressing

Reviewed: Mar. 16, 2009
Definitely a great recipe! I made this as a spread for a Turkey/Swiss sandwich tray. Got great reviews at a shower. I made it Saturday, and it tasted even better Sunday night. The flavors had more time to meld, I guess. I don't know how long the dip will stay good, but it's definitely something you can make the night before. It was more of a spread/dip consistency, as is. But I'm sure thinning it with buttermilk would make a fantastic dressing. It tasted so fresh, I might keep making this instead of buying bottles! I'm going to try the light version next time.

Martha Washington Candies

Reviewed: Dec. 22, 2008
I had these growing up and was really wanting them this Christmas Season. This recipe is exactly how I had remembered them. I made the mixture and let them set a few hours in the refrigerator. Rolled them up and refroze them. Very easy to dip with toothpicks and then come back and patch the hole with chocolate. Thanks for this wonderful recipe. No changes needed at all!!

Chicken Breasts Pierre

Reviewed: Oct. 1, 2008
Excellent!!! I doubled the sauce for 1.25 pounds of chicken tenderloins. (Probably was a little too much sauce, but I would rather have too much). We ate it over brown rice "Gumbo Style" Excellent. Most moist chicken I have ever had! Great to have something the husband loves, but still under 9 points on Weight Watchers! I can't wait to try it with breasts over french bread!

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Sep. 29, 2008
Best Oatmeal Raisin Cookie I've ever tasted! I left a small batch of cookie dough without raisins overnight and it seemed to make the clover/cinnamon taste MUCH stronger the next day. If I were to refrigerate overnight again, I'd cut back on the spices. Still an excellent recipe though!

Cake Balls

Reviewed: Sep. 29, 2008
I had to make dessert for 60-70 people at a shower and knew I would be pressed for time. I made these Cake Balls a week before and froze them (with coating and all). I took them out of the freezer 2 hours before the shower and they were fantastic! I made the recipe exactly as stated and then a carrot cake with cream cheese icing. I added toasted pecans to the icing/cake mixture and the texture on them were phenomenal. Very nice to make ahead! 4 stars because they still took a long time to make, and were very rich. You couldn't eat more than 1 (maybe two). I might would make them more bite size next time as well as the cake gets on your teeth when you eat them. They were ALL EATEN! Thanks for the recipe!

Creamy Lemon Cake

Reviewed: Jul. 21, 2008
Very good, very moist cake! Brought it for an outdoor barbecue and it was fantastic. Added zest of 1 lemon to the cake mix and it was plenty lemon-y. I think it got better the next day, so I might make it a night ahead next time.

Double Layer Pumpkin Cheesecake

Reviewed: Nov. 12, 2007
Great Recipe! I'm on Weight watchers, so I substituted Splenda for Sugar and Low-Fat Cream cheese for regular cream cheese. I baked it in a low-fat pre-made graham cracker crust. It is absolutely wonderful, and only has 5 points per serving! I will be making this again for Thanksgiving!

Slow-Cooker Chicken Tortilla Soup

Reviewed: Nov. 1, 2007
Very Good! My husband and I aren't big soup eaters. So we omitted the water and added only half a can of chicken stock. Added black beans instead of corn and had like a Mexican chicken chili. It was fantastic!

Salmon with Lemon and Dill

Reviewed: Mar. 21, 2007
Excellent! My husband has to have a "Sauce" with everything. So I used half of the ingredients from this recipe, and combined them with 4 oz Philadelphia Cream Cheese with Chives, 1 tbs Woostershire, and 1 tsp of Red Pepper Sauce. Flavors went great together. Thanks for the wonderful recipe!

Pizza Pinwheels

Reviewed: Feb. 9, 2007
It was the only food completely eaten at a girls party! Used the New Garlic Butter Crescent Rolls- YUMM. I think sliced mozerella cheese would make for a cleaner cut but shredded worked great. Made them 2 days before, froze them, and then sliced them right before the party and baked! Thanks for the wonderful recipe.
