About this Cook
I've been cooking since I was 8 years old. There's pretty much not a cuisine type that I don't like, although I do tend to favor Italian and Mexican foods. Right now, one of my joys is cooking for my church on Wednesday evenings before service. We have a crowd of about 60, and it's so fun for me! I work from home, and have 4 kiddos, so life is definitely busy. Cooking a big meal, and having my family all with me, is heaven on earth.
My favorite things to cook
I love making one pot wonders. Even now, as a work at home mom, I am all about some one pot meals. My kids love soups and stews, so that is a great thing!
My cooking triumphs
In April 2010, I competed in the Pillsbury BakeOff, in Orlando, FL. While I didn't win, the whole experience was a dream come true!! I will never forget it, and I made so many friends, who "get" me, as a foodie! lol
My cooking tragedies
Thanksgiving 2006. We were hosting Thanksgiving for the first time in our new house. I decided to try out a turkey recipe that called for laying bacon across the turkey, and basting it in a maple syrup/butter glaze. Oh, and I used a "heavy duty" foil pan. Yeah, an 18 lb turkey covered with bacon and getting glazed with maple syrup doesn't do real well in a foil pan. Needless to say, we got to make sure the smoke alarms in our new home were fully functioning!!

Strawberry Muffins
As written, I give this recipe 4 stars, but it has 5 star potential. Made it as written the first time, and they were fine, but the second time I made these changes. Used 1 1/4 cup strawberries which I mashed with my potato masher, slightly. Still had some good chunks of berries, but more of the juice seeps out to add flavor to the muffin. Used buttermilk instead of regular milk, added 1/2 tsp vanilla and 1/4 cup sour cream. These changes made for a moist, sweet muffin balanced out by the tang of the buttermilk and sour cream. Just lovely.

Chocolate Cherry Cake I
Very good, and very moist! Made this for a dinner at church, and people were eating it up. Thanks for the recipe, will make again!

Cream of Celery Soup
This is so delicious, you won't be able to back to the canned stuff! I needed a recipe for cream of celery, that I could convert to gluten free, and this fit the bill perfectly! The taste is wonderful, and like others, I left the veggies in, and just whizzed the soup with my immersion blender. Fantastic results. Since I needed it in "condensed" form, to use in a casserole, I just decreased the stock to 1.5 qts. Perfection. Thank you for sharing!
