Almond Cherry Biscotti

Turned out great. Very easy recipe. Baking it is what takes the longest. While I was waiting for it to bake and cool I was able to make another batch of cookies. I also let them sit out all night to get totally hard.

Eileen's Spicy Gingerbread Men

I followed the recipe and still needed to use more flour. I chilled the dough for over an hour and still couldn't work with it using the amount of flour in the recipe. I probably added about a cup more. They tasted great but they all broke. I made another batch and used a smaller cookie cutter and rolled the dough out a little thicker. This did the trick. I used the sugar cookie icing on this site with lemon flavoring and they tasted superb.

The dough wasn't moist enough. The balls would just crumble. I added a little water to help the dough stick together. I also made the cookies a little bigger and just cooked them longer.

Scottish Shortbread IV

Very easy recipe. Instead of strips I made little balls and flattened them with a glass cup that I had dipped in sugar. It flattened the ball and added just the right amount of sugar.

Chocolate Coconut Neapolitans

These turned out great. The cocnut is so subtle that you can hardly taste it. The only dissapointment was they turned out a little hard. I followed the cooking time and took them out when the edges were barely brown. Next time I will take them out a little sooner.

Sugar Cookie Icing

This is a great icing. I agree that the measurements are off, but when you make the suggested adjustments it works out great. I added lemon flavoring and iced gingerbread cookies. They tasted great.

Peppermint Patties

These turned out great. It was cold out when I made them, in the low 20's so I stuck them outside to dry and chill a little before dipping them. This worked oput great because it gave them some extra stiffness when dipping them in the chocolate. I had a hard time getting the chocolate chips to melt so I melted wafer chocolates in a double boiler instead.

The dough is easy to make , but these cookies take time because of waiting until the dough gets chilled enough to cut them. I made the dough before I went to bed and woke up and baked them. The dough was easy to cut. I had to bake a little longer because the dough was so cold.
