Summerly Squash

Reviewed: Aug. 18, 2009
I LOVE this recipe. I almost rated it 4 stars because my husband didn't like it. However, he only likes fried squash. I guess it's the texture he didn't like. But I give it a definite 5 star. I used one can of Rotel and one can of tomatoes with bell peppers and onions. Everything else was the same. We ate it over spaghetti with a small amount of shredded cheese on top...Yummy!

Three Cheese Manicotti II

Reviewed: Aug. 31, 2009
My family loves this recipe. I put sauce on the bottom of the pan to prevent burning the bottom of pasta. It makes a lot so I freeze one portion after assembly. It freezes beautifully. I usually only make it when family is here but last time I made it, it was just me and my husband so even one dish was way too much. I froze what we didn't eat into individual containers and when we wanted it again, I just put it in a dish with a little water in the bottom and microwaved. Tasted like it was just baked. This is a great versatile dish.

Fabulous Beef Tenderloin

Reviewed: Dec. 25, 2011
It's named correctly! Fabulous flavor and easy to make. Made it for Christmas and the whole family loved it! I used low sodium soy and replaced 1/3 of it with water. Covered the meat with garlic and black pepper. Will definitely make again.

Chicken Tortilla Soup IV

Reviewed: Oct. 10, 2010
We really loved this soup. I did it exactly as directed with the exception of following another reviewer's example and using store bought tortilla chips. It was absolutely delicious, quick and simple to make. I think it would be great with ground beef as well. Think I will try that next time.

Amazing Chicken

Reviewed: Jul. 4, 2010
I LOVED this chicken. My hubby hates mayo, so I didn't share the ingredients with him! I just eyeballed the ingredients. Also I didn't have enough of the bread crumbs, so I added Zatarain's cajun chicken frying mix. Excellent recipe...will definitely make again.

Andrea's Pasta Fagioli

Reviewed: Nov. 10, 2009
This is a great recipe! I added a pound of ground beef and browned with the onion and garlic. Used two cans of diced tomatoes with basil, oregano and garlic...two cans of mixed beans. Used mini pasta and like another user, I cooked pasta separately, rinsed in cold water and added the last 10 min. Great recipe!!!!

Catherine's Spicy Chicken Soup

Reviewed: Nov. 3, 2009
Instead of whole tomatoes, I used Rotel tomatoes and chiles...added some kick! My nephew said it was the best soup he had ever eaten...EVER!! Served it with sour cream (didn't add it to the soup), chopped green onions, shredded cheese and chopped avocado. My daughter in law also uses fresh lime to squeeze on soup if you like...I really like the lime. Superb recipe!

Angie's Dad's Best Cabbage Coleslaw

This is a great recipe. I used other reviewers' advice and used tri-color slaw mix and halved the dressing. Also didn't use celery. It was wonderful!

Awesome Slow Cooker Pot Roast

Reviewed: Jul. 17, 2009
I used chuck tender roast. Had never even heard of that cut before, but it was so tender. Also used only one can of cream of mushroom soup. Like others, I coated the roast in flour and browned it before putting in crock pot. Also used Montreal Steak seasoning on it prior to browning. Great recipe.

My husband and I really liked this recipe! I made it exactly as written except I left out salt since it uses soy sauce. It was delicious. I will definitely make it again.

Olive-Cheese Zucchini Boats

Reviewed: Jul. 4, 2010
These were absolutely delicious! I cooked the zucchini in the microwave face down with a small amount of water for 5 min. I also used, instead of the soft bread crumbs, Italian dry bread crumbs and I added chopped tomatoes because I had them from the garden. Melted the cheese on top in the oven. Everyone loved this.

Slow Cooker Chicken and Dumplings

Reviewed: Nov. 13, 2009
Great flavor! I added lots of spices as others did. I would only use one can of biscuits next time...maybe even try flour tortillas instead. I also added a large can of mixed veggies as others suggested. Will make again. I also used frozen chicken breasts and they did very well...didn't need extra time for them either.

Decadent Raspberry Brownies

Reviewed: Jan. 9, 2010
These were absolutely delicious. Our daughter in law loved them! They have a very rich chocolate flavor. Be sure to keep them out of the heat as they tend to be very messy if not kept in a cool place.
