Cousin Cosmo's Greek Chicken

My 16 year old son and I made this for his school project. We really liked it. We used arugula rather than spinach. I would recommend using double the spinach and tomato. We also thought the sauce was way too thin and stirred in some corn starch. We used chicken broth instead of water/bouillon and used the rest of the broth to cook the couscous in. We also mixed chopped scallions & pine nuts into the couscous. Delicious and very elegant!

Zucchini Bars

These are easy but I think there is too much oil in the recipe. I made to a T except I added some cinnamon. They taste good but they are too oily. It is extremely important to drain the zucchini. Just put the shredded zucchini in a dish towel and wring out. When you see how much water comes out you will see why it is so important to do this. My bars still took about 15 minutes longer to cook than what the recipe stated. If you make the frosting, make sure you add about 1 cup of the powdered sugar and taste, then keep tasting until it is the taste you prefer. Thank you! I had to change my rating on this. I guess I rated it too soon. My family loved these so I changed rating to a 5! They are very moist!

Broccoli and Cauliflower Casserole

I made this using 1 cup brown rice, 28 oz frozen broccoli & cauliflower, 1/2 lb processed cheese & about 1 T minced garlic. I melted 1/2 stick butter and stirred in the crackers and topped with that. I can't imagine using a whole pound of cheese! We love cheesy and we thought the 1/2 lb was almost too much. I will definitely make again the same way I did this time. Very good dish!

Spicy Black Bean Potato Salad

This is the second time I made this and it is sooo delicious! I love it! I added a stalk of celery for more crunch. The only thing that I would recommend is to only use 2 cups mayo and wait to see if that is enough. If not, continue to add until it's the consistency that you like. The 2 1/2 cups was a little too much for me but it could have been because of the size of the pototoes. I garnish with bacon, green onion, course ground black pepper and pickled jalapenos. This is my new favorite potato salad! Thank you for sharing it!!!

World's Best Lasagna

Wow! This is awesome! The only thing I did different is that I did not add any salt or water. We like thick sauce. And I used oven ready lasagne noodles. There were 9 in the package and I just put 3 sideways and made 3 layers. This is just delicious! Perfect for entertaining! Have salads and cheese bread ready and when you take the lasagne out of the oven, put the cheese bread in and serve the salads. By the time the salads are gone, you can take the bread out of the oven, set it on the table and cut the lasagne! It works great! Thank you for sharing this delicious recipe! I can't wait to make the sauce and try it with spaghetti! it does take some work, but we all think it is worth it!!

Baked Ham

This was wonderful! We could not quit eating it! Then later I took it out for my son and his fiance. They couldn't quit eating it either! Finally they begged me to put it away! It is so simple and it has a wonderful flavor! We followed directions exactly! We have used a regular ham and a spiral cut ham and it turned out wonderful either way. We made it at Thanksgiving and we are making it again for Christmas! Thank you for sharing this recipe!

Pumpkin Upside Down Cake

This is so good! I made it exactly as written except I added some cinnamon & vanilla to the pumpkin mixture and after I drizzled the butter on, I sprinkled about a cup of walnuts on. After this was cooked, I let it sit in fridge for about an hour and a half. Then I flipped it into a plastic 13x9 container w/ a lid and covered it and put back in fridge. Huge hit at the potluck! Thanks!

Caramelized French Toast

We were running low on syrup so I wanted to try this. My husband said he would just use up the last of the syrup because he didn't want to try it. I asked him to just try it and is he glad he did! He thought it was awesome! We will definitely make this again soon! I made the french toast on a griddle and made the "syrup" in a saucepan. I melted 2 tablespoons butter over low heat and stirred about 3/4 cup brown sugar into the melted butter. I boiled about 1/2 cup water in a ramekin in the microwave and added the boiling water until it reached the consistency that I wanted. I just whisked in the water a little at a time and it turned out perfect! I did keep the heat at medium low. I added about a teaspoon of cinnamon to the eggs and I was going to add vanilla and milk but we didn't have milk so I added french vanilla coffee creamer. We used potato bread. I also added chopped pecans and a sprinkle of powdered sugar. This was an amazing breakfast! Thank you!

Swiss Chicken Casserole I

Oh my! This was soooo goooood! The only thing that I did different was that I bought a package of thick sliced Swiss and it came with 8 slices so I put 1 and 1/3 slice on top of each chicken breast. Then I sprinkled some black pepper on top of the cheese. I love my stuffing with a little crunch so I did pull off the foil half way through cooking. Sooooo awesome! We just loved it! I served it with baby Brussels sprouts covered with a slice of American cheese! Just a great meal! Thank you so much! I will make this again for sure!!!

Sour Cream Pork Chops

Wow! We followed directions to a t. The pork chops were unbelievably tender! We served the pork chops over garlic mashed potatoes with the gravy poured over the top! Wonderful! Next time we are going to serve it over pork stuffing! This was very good!

Slow Cooker Buffalo Chicken Sandwiches

This is so good! We forgot to add the ranch and the butter and still loved it! Next time we will add the ranch & butter - I would imagine it's even better that way! The chicken was so tender and good! And this can't get any easier! It is hot but not too hot. I am wondering if the people that say it's too hot are using hot sauce and not buffalo sauce. I would think that would make a difference but I'm not sure. We had ours on buns with cheese and ranch dressing. These are spicey but good! PERFECT football recipe! Thanks!

Chicken Cordon Bleu II

The first time I made this we thought the chicken was better than the sauce. I doubled the sauce and froze it and I wasn't sure when I would use it or what I would use it for. This morning before work, I browned pork chops and put them in the crock pot with some potatoes and onions and poured the thawed sauce over all. (I normally add cream of mushroom soup.) I had about 2 cups of the leftover sauce and then I added about 1/2 to 1 cup of milk and cooked on low for about 9 hours. It turned out AMAZING! The sauce was WAY better the second time around! Now I am so excited to make the sauce again! Definitely double the sauce and try this! Next time it will be made for company!

Almond Wild Rice

This was good but kind of bland. I added garlic & onion salt and that helped. But the next day, I took the leftover rice and mixed it with leftover broccoli and chicken. I sauteed some celery and onion and microwaved a few slices of bacon. I mixed all of it together with a can of cream of mushroom soup and some milk and it was deeeeelishhh!

Broiled Tilapia Parmesan

This was delicious! My husband said this was the best fish I've ever made! I added extra butter and crushed up some garlic flavored triscuits into the topping. It was wonderful that way! I served it with some microwaved rice with some butter, salt & pepper on top and roasted asparagus spears with garlic. I leave the fish in until the topping is a little golden. It comes out a little crispy and we love it that way.

Creamy Banana Bread

Tater Taco Casserole

We love this dish! We top the ground beef with black beans and corn. Then we top that with 2 cups sharp cheddar. (We don't use the cheese soup.) Then the tater tots and bake until they are golden & crispy! We serve with salsa & sour cream! If we have black olives & green onions, they go on top! Delicious!!!!!

German Apple Cake I

I followed the directions exactly except I used one large apple. It seemed to be enough when I was stirring it in. This was super thick and after about 30 minutes the middle was hard and the edges were doughy so I took it out of the oven. My son and husband liked it but I didn't care for it. It was not like a cake at all. It was like an apple cookie. Would only make again for them. Sorry!

Chuck's Favorite Mac and Cheese

This is different. I didn't mind the cottage cheese being in it but it doesn't look very appetizing. I made 16 oz. of pasta, added a bunch more cheese, 2 green onions and 2 tsp minced garlic. Then we liked it!
