Acapulco Chicken

I gave this recipe four stars because it tastes good and is easy to make, as well as remaining inexpensive. I would, however, modify it quite a bit the next time I make it. For instance, I don't agree with using a hot pepper sauce when I could use a teaspoon of chipotle peppers in adobo sauce, or various other forms of heat and flavor that don't come in a bottle. I'm not saying not to use hot sauce and chili powder -- that is what makes it easy. I just would make the flavor a little more complex to suite my personal taste.

Crispy Baked Chicken

A very quick and easy recipe. If you are making comfort food and trying to avoid a little of the fat, try this with skinless boneless chicken breasts. Very good.

Cornbread Sausage Casserole

My girlfriend and I tried this recipe for a Saturday brunch. Although there are numerous ways to change it to suite the preferences of the individual, the base recipe is quite good. We paired it with some cheese and onion scrambled eggs and a few Bloody Marys. It was a fantastic brunch for two. We will definitely make this recipe again, but possibly with a few personal touches.

Sausage Gravy III

Excellent. As good as any sausage gravy I've ever had. I didn't quite use four cups of milk, but the outcome of this recipe was wonderful.

Exquisite Pizza Sauce

Wow. This was great. Unfortunately, I could not get any anchovy paste, but I followed the rest of the recipe exact. It tasted wonderful on the italian sausage and mushroom pizza that I made. On certain pizzas, I might tone the sweetness down just a bit, but on this one, it was perfect.

Valentino's Pizza Crust

This is an easy to make pizza crust that tastes great. I tried to make pizza crust one other time, a few months ago, and it did not turn out that well. The only thing I would do different, and it would depend on the pizza, would be to add some herbs and/or spices.

Asparagus Guacamole

This was quite good. It had all the flavor of guacamole, minus the creaminess of the avocados. I do prefer regular guacamole, but my girlfriend and I made this for a party and it went over quite well. Also, I suggest using a blue corn tortilla, or any tortilla with a bit more flavor. The standard tortillas do get a bit buried under the flavor of this guacamole.

Mushroom and Swiss Chicken

This was a wonderfully tasty dish. My girlfriend and I both enjoyed it very much. I paired it with a wild mushroom and herb couscous. It complemented the chicken nicely. When I make it again, and I most certainly will, I plan to use portabella mushrooms and make a mushroom sauce to drizzle lightly over the plate. I will pair it, this time, with a plain couscous, or try a risotto.
