About this Cook
Starting in July, I will begin working toward a Culinary Arts B.A. at Kendall College. Hooray.
My favorite things to cook
Mexican cuisine and breakfast/brunch.
My favorite family cooking traditions
My girlfriend and I listen to jazz, lounge, hip hop, etc... Throw in some Tom Waits and a little Bjork and you have a unique cooking soundtrack. Music and food go hand in hand, in my opinion.
My cooking triumphs
I am still working on recipes for turkey meatloaf and chili and I have begun working on several egg dishes and a completely killer pizza. I will put them on here when they are good enough.
My cooking tragedies
I'm still pretty bad with bread products, but I'm getting better.

Acapulco Chicken
I gave this recipe four stars because it tastes good and is easy to make, as well as remaining inexpensive. I would, however, modify it quite a bit the next time I make it. For instance, I don't agree with using a hot pepper sauce when I could use a teaspoon of chipotle peppers in adobo sauce, or various other forms of heat and flavor that don't come in a bottle. I'm not saying not to use hot sauce and chili powder -- that is what makes it easy. I just would make the flavor a little more complex to suite my personal taste.

Cornbread Sausage Casserole
My girlfriend and I tried this recipe for a Saturday brunch. Although there are numerous ways to change it to suite the preferences of the individual, the base recipe is quite good. We paired it with some cheese and onion scrambled eggs and a few Bloody Marys. It was a fantastic brunch for two. We will definitely make this recipe again, but possibly with a few personal touches.
