Spanakopita II

These were really time consuming, but in my opinion worth the effort. The only thing I would change is seasoning; I minced garlic and added it to the softened onions and continued to sautee' them until they started to brown 30-60 seconds. Don't be afraid to add the salt & pepper, because you'll need it. I used goats cheese instead of the feta and they turned out wonderfully. These were Sooo good!

Mexican Baked Fish

Overall this is a pretty good recipe; very fast & easy. I suggest you season the fish fillets prior to adding the salsa otherwise it will be a little bland; I used Southwest Ancho sear-n-crust rub to season mine. Draining the salsa if it is loose or watery is a great idea as well. If you are using a thick fish such as cod, you may want to leave it in the oven for at least 20 minutes.

Easy Shake and Bake Chicken

Very Bland tasting if you don't season the chicken or Shake & Bake prior to cooking. I washed, patted dry, & seasoned my chicken to taste (lemon pepper & other herbs) and allowed to sit in the fridge for a few hours. I also further seasoned the coating before I applied it. I also chose to use half the butter the recipe called for and added 1 Tbsp of grapeseed oil (can use veg or canola if you like)It cuts the calories way down & still tastes great. ***If you are making this recipe with bone-in breasts only, you may want to reduce the cooking time by about 10 minutes.

Salmon Cakes II

I wasn't overly impressed with this recipe before modifications; however, with a few adjustments they are great. I used Ritz crackers crumbled instead of the bread; egg beaters (more than the equivalent of 1 egg.) Extra Worcestershire sauce, & hot sauce or BBQ sauce; add 1/8tsp garlic powder. You may use canola instead of olive. For a nice sauce, mix your favorite Dijon or honey Dijon mustard, mayo, lemon juice, garlic powder, & pepper. If you like yours with a little more kick, add a little horseradish sauce. Yum! Thanks for sharing!

Broiled Tilapia Parmesan

This recipe was fantastic! The texture of the fish was perfect; the flavor was impecable, (although I suggest that you add a pinch of salt or two); and the preparation was quick and easy. The only other thing I might suggest is that you double the sauce recipe because there was not enough to suit my tastes; but other than that, this tilapia was wonderful!
