Chocolate Gingerbread Cookies

Not so good. The only person who liked these was my 3-year-old daughter so we sent them with her to school. Followed the recipe exactly. They came out looking beautiful, just didn't care for the gingerbread/chocolate combination.

Butterscotch Oatmeal

WOW! I didn't think I could EVER replace my Quaker Oatmeal with Maple and Brown sugar. . .but this is it! I only used 1/4 cup of brown sugar as most people recommended and also used quick oats. One reviewer mentioned saving the leftovers in the fridge and re-warming the next day. I will try that! It doesn't take too long to make, but anything that speeds up my morning is a plus.

Six Week Bran Muffins

20 minutes is much, much too long in the oven at that temperature. Mine took 15 minutes. I used 1/2 brown sugar and 1/2 white sugar. . .also decreased the total amount of sugar by about 1/4 cup. I made about 3 dozen muffins and will freeze most of them.

Wonderful Banana Cake

Yum! Made with two bananas. Added only a dash of cinnamon and a little freshly grated nutmeg. Baked according to directions on my cake mix box. So delicious and SO easy, this one's a keeper.

Mom's Warm Milk

Yum! I was not expecting to like this myself - I made it for my 3-year-old daughter - as I'm not a big milk drinker. But it tasted like Christmas. . .reminded me of a Chai tea latte. I cut the sugar in half and used freshly grated nutmeg. My new bedtime ritual. . .

Poppy Seed Dressing

Really good! I didn't have ground mustard but instead used about 1/2 t. French's mustard and 1/2 t. Coleman's mustard. The Coleman's has quite a kick and I didn't want it to be too "spicy" for my 3-year-old (yes, my 3-year-old likes salads!). Served it over a spinach salad with peaches and toasted walnuts, then had it the next night over a fruit salad. Delicious!

Firecracker Grilled Alaska Salmon

Awesome! I don't usually have seconds on salmon, but I did tonight! I only used half of the red pepper flakes and my three-year-old ate it with no complaints about it being spicy, and she usually picks up on the slightest hint of spiciness. Had a very subtle "kick" to it. Next time I will marinate overnight. This one's my new fave!

Get-Well Custard

Yum! The perfect comfort food. I just had a baby 2 weeks ago and have been eating this custard all the time. Love that it makes a big batch. . .it's always in the fridge and ready to eat now that I have zero time on my hands. I found that cooking it for one hour is perfect.

Caramel Apple Dip

Yum! How can you go wrong with these ingredients? Makes a great, smooth dip. We halved the recipe and my husband, toddler and myself polished it off with just 2 apples! Will definitely hang on to this recipe.

Cream of Pumpkin Soup

Fantastic! I only had 1/2 a can of pumpkin so I added one sweet potato and one carrot. Added extra cinnamon and ginger but will half the salt next time. Also added a little bit of nutmeg and maybe 2-3 Tablespoons brown sugar. This one's definitely a keeper - excellent for fall!

Butternut Squash Soup II

Delicious! My husband and toddler both loved it. I agree that the sour cream is a MUST! I left out the celery and, in addition to salt and pepper, added just a little ginger, cinnamon and brown sugar. Makes a large batch - I'll be freezing half of it for another meal.

Maple Salmon

I loved it, but it wasn't my husband's favorite. We have another recipe that is almost identical but uses butter and brown sugar instead of the maple syrup. I thought this one was great, though, and my 2-year-old ate every bite of hers. Made it with double the marinade and used the extra to drizzle over the salmon and also our rice.

Butternut Squash with Onions and Pecans

Good recipe if you LIKE squash. I was surprised by some of the negative reviews of people who thought the dish would be sweeter. I did as another reviewer suggested and added a little ground ginger and coriander to the onions as they were cooking. My whole family thought this was a delicious recipe for butternut squash.

Playgroup Granola Bars

Very tasty. . .not too crunchy, not too chewy. They're a good texture for my 2-year-old to eat. As others suggested, I only used 1/2 cup brown sugar, and I went 50/50 on the flour (all-purpose/whole wheat). Took a little less than 30 minutes in my oven. I'll experiment more next time with more add-ins: nuts, craisins, etc.

Apple Pumpkin Muffins

Really, really yummy! And they smell great while they're baking. I cut back on the sugar, using only 1 1/2 cups and they were plenty sweet enough. Didn't measure my diced apple; just used one medium apple and that seemed to be just right. Left out the topping to save on fat and sugar and they were still great. Will pass this recipe on to my family.

Fantastic! I made it exactly as written, except it didn't need anywhere near 20 minutes. It was done after about 7-8. Will definitely be making this again. Very easy and with ingredients you always have on hand.

Chewy Peanut Butter Brownies

Delicious! So many modications were being made to this recipe, I decided to make the recipe almost "as is." My only change was increasing the p.b. to 3/4 cup. Chocolate frosting would be great, but I took the super-quick approach and tossed some chocolate chips on the top as soon as they came out of the oven. . .then just spread them around a bit once melted. I'll be taking these to a meeting tonight and expect them to disappear quickly!

Martha's Vegetable Beef Soup

Made a few modifications and both my husband and my toddler loved this! I sauteed an onion and some garlic along with the beef, used spaghetti sauce (instead of plain tomato sauce), beef broth (instead of water), added 1 can of butter beans and several good dashes of Worcestershire. Really tasty served with hot cornbread. A very hearty meal!
