Sharon's Scrumptious Souvlaki

I loved the red wine marinade, although it might have been a bit too strong for my anglo-saxon parents. (But make sure to use lamb that's not too gamy or else even the marinade won't help.)EVERYONE loved the yogurt sauce, but the recipe as is makes far too much. Even after spending some time in Greece I couldn't tell you how authentic this souvlaki is, but it is delicious!

Pico de Gallo Chicken Quesadillas

I made these for some friends at school, and they begged me not to leave the state! Just a few suggestions...the most important being - don't put the pico de gallo inside the quesadilla! The pico de gallo makes everything too slippery, and the quesadilla's filling falls out when cooking. The pico de gallo tastes much better when separate and used as a sauce. Other than that - I regularly substitute a red bell pepper for green, occasionally omit the jalepeno, and usually go vegetarian by omitting the chicken as well. This recipe is versatile!

Zucchini Patties

Simple and easy comfort food that's almost good for you! When I make these, I grate the zucchini by hand and then squeeze as much water out as I can through a dish towel / cheese cloth. (My mom forgot to do this once, and the patties were too mushy.) I also use about half the recommended amount of Parmesan (a little goes a long way) and add a dash of garlic powder.

A bona fide hit both times I've made it. My only advice - omit the sugar. Otherwise, it is GREAT as is!

Stuffed Peppers My Way

My mom and I make this recipe all the time, so I figured I should finally review it! This is by far the best stuffed peppers recipe I have ever found / eaten. The feta really gives it an oomph. These are the only changes I ever make: -substitute red/yellow peppers for green -use white AS WELL AS green onions -add spices liberally -once I used canned diced tomatoes because it was all I had, and that worked out fine too
