Panettone I

Gluten Free ~ I followed this recipe but changed the 4 cups of white flour to 2 cups almond flour and 2 cups tapioca flour. I also used vanilla yogurt since many people mentioned it not being sweet enough. I thought it would add a nice touch of sweetness. My dough was too runny to knead but I scooped it into muffin tins and mini bread pans and let it rise still for 45 min. Then I baked it until it was a golden brown. They are absolutely fantastic. It doesn't look like they puffed like original panettone but they were still airy and so freaking delicious. :-) My husband decided to add candied ginger to one loaf and it was an excellent decision.

Delicious Gluten-Free Pancakes

Gummy texture...No matter how long I cooked these they still didn't seem to cook in the middle. Maybe it was because I used real buttermilk and not the buttermilk powder/water option. I'm new to gluten free cooking and this was my first pancake recipe. I could taste the potato starch. My kids weren't a fan. HOWEVER, I give it 3, almost 4, because they actually taste great cold.

Dansk Aebleskiver (Danish Doughnuts)

I really wanted to try these but I didn't have the special pan. I went ahead and used my cast iron skillet instead. I used a thin layer of peanut oil instead of shortening. The batter was thick enough that it made little pancake shapes but thicker. I fried 4 spoonfuls at a time and flipped them after a few minutes. They turned out tasty. They have a nice crunchy layer on the outside and a soft breadlike middle. Because I like a sweeter "pastry" I added a bit more sugar and I also added cinnamon. The cinnamon and cardamom play well together. My son liked them plain. My daughter liked them with the cinnamon/powdered dusting sugar. I liked them with my organic raspberry pomegranate jelly. My husband thought they would taste better in Denmark but he still enjoyed them. ha ha Overall these were pretty good and they worked just fine without the special pan. They would probably be better with the special pan since it would crisp all edges as well but it was manageable and tasty anyway.

Debdoozie's Blue Ribbon Chili

I didn't believe Debdoozie when she said this would win at chili cookoffs at work, but I entered anyway. How wrong I was! First place, red chili category! It's a wonderful chili that is so easy to make, tastes great, and you can easily spice it up as needed. With two picky kids at home, we have no problem with them finishing their dinner with this chili. I really doubt you'll be disappointed with this one.

Flatlander Chili

Hubby asked for the canned "Hormel Chili w/out beans" to add to baked potatoes tonight. Because I'm trying to cook more naturally, I searched allrecipes for a good homemade chili recipe instead. I made this recipe without the beans and used can of chunky tomato sauce in place of juice (as others suggested). I accidentally bought a "chili powder blend" instead of plain chili powder. It has cocoa powder, cinnamon, cloves, red chili powder and more. I found that even with all those flavors the chili was a bit bland. I doubled the seasonings, added more salt and it was much better. Hubby still likes the Hormel better, unfortunately, due to the lack of chunky veggies in Hormel. I loved it and it tastes AWESOME on my baked potato.

Anna's Amazing Easy Pleasy Meatballs over Buttered Noodles

This is delicious! A few notes: 1. I used spinach semolina egg noodles. 2. I used organic cream of chicken and cream of celery soups. 3. I made homemade meatballs. 4. I like it saucy so I only used half the noodles suggested. My son didn't like the sauce because of the sour cream. He's not a sour cream fan. My daughter loved it.

Pumpkin Pancakes

Beautiful and delicious... The other night I babysat 3 kids along with my two. I thought...pancakes for dinner would be fun. The batter consistency seemed more like waffle batter. Like many other reviewers I had to add more milk (maybe 1/2 c. or more)to make pancakes. I added a bit more spice as well. When the pancakes were done I spread real butter on them and sprinkled powdered sugar. It was a hit. All the kids loved them (one of them is the pickiest kid I've ever seen). I did use the new white whole wheat flour. It added a bit of fiber but looked just like white flour.
