Panettone I
Gluten Free ~ I followed this recipe but changed the 4 cups of white flour to 2 cups almond flour and 2 cups tapioca flour. I also used vanilla yogurt since many people mentioned it not being sweet enough. I thought it would add a nice touch of sweetness. My dough was too runny to knead but I scooped it into muffin tins and mini bread pans and let it rise still for 45 min. Then I baked it until it was a golden brown. They are absolutely fantastic. It doesn't look like they puffed like original panettone but they were still airy and so freaking delicious. :-) My husband decided to add candied ginger to one loaf and it was an excellent decision.

Delicious Gluten-Free Pancakes
Gummy texture...No matter how long I cooked these they still didn't seem to cook in the middle. Maybe it was because I used real buttermilk and not the buttermilk powder/water option. I'm new to gluten free cooking and this was my first pancake recipe. I could taste the potato starch. My kids weren't a fan. HOWEVER, I give it 3, almost 4, because they actually taste great cold.

Dansk Aebleskiver (Danish Doughnuts)
I really wanted to try these but I didn't have the special pan. I went ahead and used my cast iron skillet instead. I used a thin layer of peanut oil instead of shortening. The batter was thick enough that it made little pancake shapes but thicker. I fried 4 spoonfuls at a time and flipped them after a few minutes. They turned out tasty. They have a nice crunchy layer on the outside and a soft breadlike middle. Because I like a sweeter "pastry" I added a bit more sugar and I also added cinnamon. The cinnamon and cardamom play well together. My son liked them plain. My daughter liked them with the cinnamon/powdered dusting sugar. I liked them with my organic raspberry pomegranate jelly. My husband thought they would taste better in Denmark but he still enjoyed them. ha ha Overall these were pretty good and they worked just fine without the special pan. They would probably be better with the special pan since it would crisp all edges as well but it was manageable and tasty anyway.
