Spaghetti Squash I

I've made this exactly as listed, and it was delicious. In an attempt to make it a bit more filling I made a few adjustments and created a customized recipe with chicken, roasted tomatoes, pine nuts and sundried tomatoes ... Amazing.

Layered Chicken and Black Bean Enchilada Casserole

This was phenomenal. Following others' suggestions, I placed the tortillas on a pan in the oven at 450 for about 10 minutes, used fat free plain yogurt in place of sour cream, doubled the chile peppers, used a combination of pepper jack and cheddar cheeses, and added slices of avocado on top of the casserole after baking. I also marinated the chicken in olive oil, lemon / lime juice, garlic salt, 2 tsp chile powder, and 1 tsp each of cumin and coriander.

Fantastic Black Bean Chili

Like others, I browned the turkey and onions on the stove, then transferred everything to a slow cooker and let it cook on low for as long as I could stand it. I added 1/2 T cumin and about 2 T of chipotle chiles blended in adobo sauce for an extra kick and some smokey flavor. Served with chile and cheddar corn bread. Yum!

Sangria! Sangria!

This is always a hit. I eliminate the cherries, can't stand them, and add whatever fruit/berries I have laying around. Sliced pears, limes, oranges and whole blackberries is my favorite combination. If there's time, I like to make it the night before, and add cold ginger ale just before serving.

Lemon Fried Rice

I did not follow the recipe exactly, which is why I only gave 4 stars. The recipe gave me an excellent base to start from with some ingredients I had laying around. I did not have green onions, so I browned some chopped red onion (about a 1/4 cup) and 2 cloves of garlic instead, I also added the juice of 2 lemons and about a 1/4 cup of chopped carrots in with the second half of ingredients. I used brown rice, and it tasted great. Next time I will also use the green onion.

Easy Garlic Broiled Chicken

This was fantastic. I cooked the thighs for 35 minutes at 375, saving 1/3 of the sauce to add when I turned them 15 minutes in. I then transferred the chicken to a foil covered cookie sheet and broiled them on high for 5 minutes.

Bacon-Wrapped Chicken Stuffed with Spinach and Ricotta

I don't think I needed as much filling as the recipe called for, but it was tasty. The bacon was a little soggy on the bottom, I think I'll try to BBQ it next time so the bacon stays crispy on both sides.

Goat Cheese and Spinach Turkey Burgers

The Best Meatloaf I've Ever Made

This turned out great! I did make quite a few changes, although the actual recipe for the meatloaf itself was nearly same (I used Italian bread crumbs instead of crushed crackers, and eliminated milk, because it was perfectly moist without). I cooked mine in a slow cooker. Meatloaf in a slow cooker is quite easy. Line the slow cooker with 2 sheets of foil, so they cross at the base and there is extra foil hanging over the sides (you will use the foil to pull out the loaf when finished). Then you shape your meat into a loaf, place inside the slow cooker, cover with sauce and cook on high for 4 to 6 hours. The sauce I used included the other half can of tomato sauce, 1/2 cup water, about 1 T of worcestershire sauce, 2 tsp prepared mustard, and a bit of brown sugar.

Lemon Rosemary Salmon
