Classic Waffles

We all enjoyed these for breakfast with sliced strawberries and whipped cream. The only thing I do differently is make waffles in the blender. First I whip up the egg in the blender then add the rest of the wet ingredients and blend quickly. Then add the mixed dry ingredients to the blender and use the stir cycle until well mixed. Then I pour it directly onto the waffle iron. I add extra milk to thin out the batter if it needs it. Easy! and a nice treat. Enjoy.

California Melt

I'd give this sandwich a 4.5* rating for being quick delicious and healthy. The only change I made was to the mushrooms. I sauteed them until lightly browned, then added about 1/2 tsp of Chipotle puree and a splash of dark tequila (yes tequila!)to the pan. Let the alcohol evaporate and voila, this recipe just got kicked up a notch. I'll make this often. Thanks for sharing.

Beef Sirloin Tip Roast

I've made this roast as is and it is very good considering it takes 5 mins to throw together. For those who complain that it is bland, well, not sure what you expect from a recipe that is this simple. When I have company this is what I do to spruce up the recipe: I poke small holes and put slivers of fresh garlic in the roast. Crack some pepper and sea salt, rub it in and sear the meat in dutch oven. I use a bit more than half of the onion soup (don't need as much as meat already salted),and some water before putting it in the oven with the lid on. I don't bother with the foil. It's usually cooked med in two hours and is always tender and very tasty. The gravy comes out a little darker and has deeper flavor.

This is similar to the hot spiced wine we get when we go skying at Mont Tremblant, except this recipe is much sweeter. At the hill it is served with cinnamon sticks and sugar on the side. Will make again but cut the sugar to 1/3 of a cup. As written it is way too sweet for our taste.

Scarlett's Best Ever Sugar Cookies

These cookies were very good and are similar to short bread (only easier because you don't have to roll out the dough. The only change I made was decrease the oil by 1/3 rd as suggested by others and dipped half in red and half in green colored sugar to make them more festive. Would make these again.

Apple Betty

This dessert was soooo good, I made it twice in two days. The first time, I followed the recipe exactly and it was delicious. The second time, I made a healthier version by 1. cutting down the butter by 2 tbs, 2. using half whole wheat, half white flour, and 3. leaving the skin on half the apples. It was just as delicious. Thanks for sharing.

Frosted Banana Bars

Very delicious, foolproof way to use up over rippened bananas. Decreased sugar to 1 cup, used all 4 bananas I had and only 1 egg as that was all I had. Used 9X13 pan. Turned out great, as I said foolproof.

Chicken Asparagus Roll-Ups

I made this for my Mother in Law's Birthday dinner party. A little time consuming but well worth it as everyone loved it. I tripled the recipe to have enough for the crowd and had way way more sauce left over than needed. (Doubling the sauce would have been plenty) I also ran out of asparagus so improvised by adding sliced black forest ham before rolling up the last few chicken breasts. YUMMM! My husband liked those with the ham the best. I thought they were both delicious. Great recipe, would not hesitate to recommend this for a special meal.

Slow Cooker Texas Pulled Pork

Since my roast was still partially frozen, I cooked it in the oven all day at very low heat. The result was an excellent pulled pork recipe. Even though I did alter the cooking method I followed the rest of the recipe and indredients omitting only the thyme...it turned out excellent. I skimmed off most of the fat before mixing the pork back in to the sauce.

Apple Pecan Cobbler

Very good! I like to use brown sugar in the apples, it makes a beautiful caramel color and taste. I also doubled the cinnamon and added a pinch of nutmeg. For the cake I had to use skim milk, it was perfect. Will make this one again.

Rhubarb Cake I

4 1/2 * - I didn't rate this 5 stars because 2 cups rhubarb would not be nearly enough. I used 4 cups rhubarb and it was delicious, quick and easy. Will use this cake recipe with other fruit as well.

Oregon Salmon Patties

Very good. My three picky children ate well without complaints. Did not use the liquid s suggested by other reviewers but did add about 2 tsp of lemon juice. The lemon flavor was good addition, but the mixture was still too wet. Next time will try adding a little lemon rind.

Janet's Rich Banana Bread

I have made this banana bread several times, it is excellent as written. But here's what I have learned along the way... Doesn't matter if you melt the butter or not, comes out the same, so I don't bother it saves time. I have used sour cream and vanilla Greek yogurt, both work well. Texture is the same, only difference is the bread is slightly less tangy when using the yogurt. I think the tanginess is what I love that about this recipe so when I have the sour crème I use it, otherwise good to go with Greek yogurt.

Banana Oat Muffins

Absolutely delicious! I've tried numerous banana muffin recipes, all of which are very similar. This is the first recipe that calls for sour cream that I have tried, and I beleive that is what makes these muffins soooooo good and so moist. And you needn't bother to grind the oats. I used them whole and it was great. Also I cut down on the butter by half as suggested and they still had a yummy buttery flavor.

Coconut Cream Cake I

IF RECIPE IS FOLLOWED, this cake is by far the best "not from scratch" cake I have ever tasted, and so easy. HOWEVER, IT DID NOT START OUT THAT WAY. I made the cake 2 days ahead as suggested by others which was a good idea. I then deviated from the recipe and used the "cool whip frosting" recipe suggested by others and that was a flop, literally. I don't know if it was because I used skim milk, but the frosting literally melted off the sides of the cake. I scraped it all off the cake, used the whipping cream as directed in the recipe and it worked perfectly. Even my husband who always requests my homemade black forest cake for his birthday says he wants this one next time. Thanks. YUM!!!

Quick and Easy Chicken Noodle Soup

As good as the soup I make with home made stock, without all the fuss. I did add 2 bay leaves (remove before serving)and a few teaspoons of McCormick's refrigerated Gourmet mixed herb. Perfect!Will make this often.

Chicken Breasts with Herb Basting Sauce

Moist and juicy Chicken, perfect blend of seasoning. I, too baked uncovered for the last 20 minutes and the skin was golden brown. I'm going to use this blend of herbs next time I roast a whole chicken (under the skin as well as on top). Will add this one to my favorites. Thanks for sharing.

Salmon Chowder

Picky kids liked this one too. I did alter the recipe slightly. Instead of canned salmon, used 4 oz of smoked and about 8 oz of fresh cubed up and added once potatoes were cooked. Simmered until opaque then added only 1 cup of cheese. Will make this again.
