Quick and Easy Chicken Noodle Soup

Reviewed: Mar. 8, 2008
As good as the soup I make with home made stock, without all the fuss. I did add 2 bay leaves (remove before serving)and a few teaspoons of McCormick's refrigerated Gourmet mixed herb. Perfect! Will make this often.

Garlic Green Beans

Reviewed: Mar. 3, 2008
We thought this was just ok, even with freshly steamed green beans (I can't imagine how this recipe would work with canned beans). Quite greasy too, sorry but I would not make this again.

Baked Asparagus with Balsamic Butter Sauce

Reviewed: Mar. 3, 2008
It doesn't get simpler than this, and wow what a nice change from your typical steamed asparagus. Everyone loved it, will make this again and again.

Chicken Breasts With Herb Basting Sauce

Reviewed: Feb. 28, 2008
Moist and juicy Chicken, perfect blend of seasoning. I, too baked uncovered for the last 20 minutes and the skin was golden brown. I'm going to use this blend of herbs next time I roast a whole chicken (under the skin as well as on top). Will add this one to my favorites. Thanks for sharing.

Fish Fillets Italiano

Reviewed: Feb. 25, 2008
This dish really deserves a 4 1/2* it is that good and so easy to prepare. I did feel it needed a little something so I added about 1tbs of mixed herb blend by McCormick (a paste you can find in the spice section) and some fresh ground pepper. Perfect! Will make again and experiment with other firm fish.

Salmon Chowder

Reviewed: Feb. 13, 2008
Picky kids liked this one too. I did alter the recipe slightly. Instead of canned salmon, used 4 oz of smoked and about 8 oz of fresh cubed up and added once potatoes were cooked. Simmered until opaque then added only 1 cup of cheese. Will make this again.

Apple Carrot Muffins

Reviewed: Feb. 5, 2008
I followed the recipe exactly except that I lowered temp to 375 as I used convection bake. They came out of the oven golden brown and were very tasty. I did notice that some of the flakes did not melt into the batter, so next time I will soak the bran in the buttermilk mixture for a few minutes before adding the carrots and apple, then add that to the dry stuff. All in all excellent muffins, my children gobbled them up after school.

Spinach Quiche

Reviewed: Jan. 16, 2008
This quiche was delicious and even better the next day. The only change I made was cut down the butter to 1/3 cup as suggested by others, also I never use canned mushrooms in anything, the taste and texture are horrible (my humble opinion). Instead I chopped up a large portebello mushroom and added it with the garlic and onion. YUM now that's what mushrooms are supposed to taste like. Will definitely make this again soon.

Classic Waffles

Reviewed: Dec. 29, 2007
We all enjoyed these for breakfast with sliced strawberries and whipped cream. The only thing I do differently is make waffles in the blender. First I whip up the egg in the blender then add the rest of the wet ingredients and blend quickly. Then add the mixed dry ingredients to the blender and use the stir cycle until well mixed. Then I pour it directly onto the waffle iron. I add extra milk to thin out the batter if it needs it. Easy! and a nice treat. Enjoy.

Cappuccino Mousse Trifle

Reviewed: Dec. 28, 2007
Delicious trifle. I only had one tablespoon of the regular instant coffee granule left so I topped it up with french vanilla instant coffee, it was very good. I would recommend making this early in the day to allow the cake to absorb some of the moisture or the pound cake tends to be a little dry. Will make again.

Scarlett's Best Ever Sugar Cookies

Reviewed: Dec. 19, 2007
These cookies were very good and are similar to short bread (only easier because you don't have to roll out the dough. The only change I made was decrease the oil by 1/3 rd as suggested by others and dipped half in red and half in green colored sugar to make them more festive. Would make these again.

Oregon Salmon Patties

Reviewed: Dec. 4, 2007
Very good. My three picky children ate well without complaints. Did not use the liquid s suggested by other reviewers but did add about 2 tsp of lemon juice. The lemon flavor was good addition, but the mixture was still too wet. Next time will try adding a little lemon rind.

Big Soft Ginger Cookies

Reviewed: Nov. 7, 2007
What can I say that has not already been said: these are absolutely the best cookies. What I did to solve the sticky dough problem is scoop up the dough with the small cookie dough scooper from pampered chef, dredged it through the sugar then plopped it on the tray sugar side up. No sticky fingers. Thanks

Cabbage Soup II

Reviewed: Oct. 29, 2007
Delicious! I used one box of campbell's reduced salt and one regular chicken broth. I also added 3 cloves of minced garlic, a pinch of thyme and 3 bay leaves (remove prior to serving) for a hint of extra flavor. For those of you who felt it was salty.... try adding the ham in the last 15 mins of cooking, not only will less of the salt from the ham leach into the soup, the ham won't toughen up or become a weird pale color. Thanks for the post.

Granny Kat's Pumpkin Roll

Reviewed: Oct. 29, 2007
I would give this a 3 and half stars, it is very easy and beautiful presentation. However I would have liked a less dense cake. I tried this recipe twice, even opened up some fresh baking soda, just in case, but even then the cake was very dense and too moist. Filling is very good.

Cornflake Slice

Reviewed: Sep. 11, 2007
I regularly have these ready as an after school snack for my bunch. I cut the butter to 1/4 cup and omit the nuts because of a nut allergy. I add 1/3 cup or so of flax seed for the added nutrition. Believe it or not the seeds are a great addition, and my picky eaters approve.

Pork Tenderloin with Creamy Herb Sauce

Reviewed: Feb. 27, 2007
Results are quite good with the modifications others had suggested such as onion, garlic added with the carrots, which I more than doubled. Still sauce was a little bland, so I added half teaspoon of low sodium chicken stock granules, did the trick. Super easy and quick to prepare. Served with mashed potatoes, and steamed broc and cauliflower. Everyone enjoyed it. Thanks.

Banana Oat Muffins

Reviewed: Feb. 6, 2007
I've tried many of the healthier/lower fat versions of banana muffins. This being one of the best. I did use half whole wheat and half non bleached white flour as well as large flake oats. Great texture and just enough sweetness. Will keep this one in the favorites file.

Apple Betty

Reviewed: Nov. 24, 2006
This dessert was soooo good, I made it twice in two days. The first time, I followed the recipe exactly and it was delicious. The second time, I made a healthier version by 1. cutting down the butter by 2 tbs, 2. using half whole wheat, half white flour, and 3. leaving the skin on half the apples. It was just as delicious. Thanks for sharing.
