Janet's Rich Banana Bread

I have made this banana bread several times, it is excellent as written. But here's what I have learned along the way... Doesn't matter if you melt the butter or not, comes out the same, so I don't bother it saves time. I have used sour cream and vanilla Greek yogurt, both work well. Texture is the same, only difference is the bread is slightly less tangy when using the yogurt. I think the tanginess is what I love that about this recipe so when I have the sour crème I use it, otherwise good to go with Greek yogurt.

Lemon Blueberry Bread

Excellent flavor and texture. I used the zest and juice of a fresh lemon, and used powdered icing sugar instread of white sugar to make the glaze. Very easy, delicious recipe... will make this again.

Chicken Asparagus Roll-Ups

I made this for my Mother in Law's Birthday dinner party. A little time consuming but well worth it as everyone loved it. I tripled the recipe to have enough for the crowd and had way way more sauce left over than needed. (Doubling the sauce would have been plenty) I also ran out of asparagus so improvised by adding sliced black forest ham before rolling up the last few chicken breasts. YUMMM! My husband liked those with the ham the best. I thought they were both delicious. Great recipe, would not hesitate to recommend this for a special meal.

Beef Sirloin Tip Roast

I've made this roast as is and it is very good considering it takes 5 mins to throw together. For those who complain that it is bland, well, not sure what you expect from a recipe that is this simple. When I have company this is what I do to spruce up the recipe: I poke small holes and put slivers of fresh garlic in the roast. Crack some pepper and sea salt, rub it in and sear the meat in dutch oven. I use a bit more than half of the onion soup (don't need as much as meat already salted),and some water before putting it in the oven with the lid on. I don't bother with the foil. It's usually cooked med in two hours and is always tender and very tasty. The gravy comes out a little darker and has deeper flavor.

Slow Cooker Texas Pulled Pork

Since my roast was still partially frozen, I cooked it in the oven all day at very low heat. The result was an excellent pulled pork recipe. Even though I did alter the cooking method I followed the rest of the recipe and indredients omitting only the thyme...it turned out excellent. I skimmed off most of the fat before mixing the pork back in to the sauce.

Fabulous Beef Tenderloin

I gave this recipe a 4* for ease of prep and because the meat was melt in your mouth tender... but the gravy was way too salty. (and I used reduced sodium soy sauce). I might use this recipe as a method of preparing the meat and discard the sauce rather than use it.

Cherry Snowballs

Excellent recipe.... a little time consuming but the results are worth it. I followed the recipe exactly except that I ground up my oat, I'm glad I did, I don't think I would have liked the texture as well otherwise. I used unsweetened coconut and the cookies are plenty sweet, so pretty too!

Banana Oat Muffins

Absolutely delicious! I've tried numerous banana muffin recipes, all of which are very similar. This is the first recipe that calls for sour cream that I have tried, and I beleive that is what makes these muffins soooooo good and so moist. And you needn't bother to grind the oats. I used them whole and it was great. Also I cut down on the butter by half as suggested and they still had a yummy buttery flavor.

Angela's Awesome Enchiladas

Very delicious. A little time consuming but worth it. I used a mild Enchilada sauce, next time I would use the spicy sauce for extra zip. Also- not a fan of cream soup as ingredient but in this case you would never know it was used. I'll make this again.

Brown Sugar Meatloaf

I'm glad I read the reviews and made a few alteration. Loaf - reduced milk to 1/2 cup, and used bread crumbs. Glaze - reduced sugar to 1/3 cup and added about 1 tsp on Worchesterchire sauce. Put the glaze on top. Everyone, really enjoyed this one. This will replace my meatloaf recipe, which is good but not quite as good.

Grilled Tilapia with Mango Salsa

Wow, delicious and such an interesting combination of flavors. I used mahi mahi fillets and baked in the oven instead of grilling. Other than that followed the recipe exacly. This is one of the best recipes I have made from this site.... and I have tried many.

Apple Pecan Cobbler

Very good! I like to use brown sugar in the apples, it makes a beautiful caramel color and taste. I also doubled the cinnamon and added a pinch of nutmeg. For the cake I had to use skim milk, it was perfect. Will make this one again.

California Melt

I'd give this sandwich a 4.5* rating for being quick delicious and healthy. The only change I made was to the mushrooms. I sauteed them until lightly browned, then added about 1/2 tsp of Chipotle puree and a splash of dark tequila (yes tequila!)to the pan. Let the alcohol evaporate and voila, this recipe just got kicked up a notch. I'll make this often. Thanks for sharing.

Almost No Fat Banana Bread

Very, very good - with a little tweaking as good as the higher fat banana breads I've made from this site. I used 1 cup white and 1/2 cup whole wheat flour. added a few dashes of cinnamon and nutmeg and a pinch of salt. Used 3 medium, very ripe bananas and the bread turned out really moist and perfectly sweetened. Note: for those who said it turned out rubbery... you over stirred.

Zesty Porcupine Meatballs

Rarely would I bother making this type of dish, admittedly I am a "fresh ingredients snob". However my crockpot died and dinner went with it so I took some meatballs I had made ahead out of the freezer. Looking for a quick fix I came across this recipe and saw the great reviews. I was skeptical but tried it anyway. I don't know how to put this gently but I did not care for this recipe. The sauce has a salty weird flavor. My children would not eat it and after trying it I had to agree.

Rhubarb Cake I

4 1/2 * - I didn't rate this 5 stars because 2 cups rhubarb would not be nearly enough. I used 4 cups rhubarb and it was delicious, quick and easy. Will use this cake recipe with other fruit as well.

Jamie's Cranberry Spinach Salad

Really good. I didn't use poppy seeds in this particular recipe, I don't think it would be a good fit. Otherwise followed the recipe and it was enjoyed by all. Very nice addition to Easter dinner. Thank you, will make this again.

Coconut Cream Cake I

IF RECIPE IS FOLLOWED, this cake is by far the best "not from scratch" cake I have ever tasted, and so easy. HOWEVER, IT DID NOT START OUT THAT WAY. I made the cake 2 days ahead as suggested by others which was a good idea. I then deviated from the recipe and used the "cool whip frosting" recipe suggested by others and that was a flop, literally. I don't know if it was because I used skim milk, but the frosting literally melted off the sides of the cake. I scraped it all off the cake, used the whipping cream as directed in the recipe and it worked perfectly. Even my husband who always requests my homemade black forest cake for his birthday says he wants this one next time. Thanks. YUM!!!
