Butternut Squash Casserole

I made this dish for Thanksgiving and everyone loved it. It tasted fantastic and wasn't very hard to make at all. Even my kids ate it. It was just fabulous.

Prune and Olive Chicken

This chicken was amazing....so flavorful. My family and I loved it and I will definitely be making it again. You wouldn't think that the prunes and brown sugar would go well with chicken but somehow it just does and it was great!! Thanks for sharing.

Roasted Red Pepper Tapenade

An excellent dip but it has way too much garlic in it. I used 3 and it was still too much. I'm thinking maybe 1/2 to 1 clove is all it needs. I will definitely make it again, just will use much less garlic

Simple Guacamole

Absolutely delicious. I really loved this guacamole. I added a bit of chopped cilantro and a few drops of hot sauce to spice it up a bit. Will make again.

Lemon Chicken Tenders

This was really delicious and my family and I loved it. The only thing I would do next time is I think I will leave the chicken whole and not cut it up into chunks and I will make extra sauce for dipping. Definitely a keeper!!!

My family and I really enjoyed this. I also took the advice of other posters and used less butter. I put in about 3 tablespoons and also used some olive oil and white wine. I will definitely make this again.

Grilled Shrimp and Apple Skewers

My family and I loved this recipe, even my 2 kids who are very picky eaters. The marinade was a wonderful mix of flavors. I loved it so much that tonight I'm going to try the marinade on grilled chicken. This recipe is a definite keeper. Thank you for sharing it.

Potato Salad I

This was absolutely delicious. It did take a long time to make, longer than I thought it would. I would definitely make it again when I had a bit more time. I did add some chopped fresh dill and parsley. This recipe is a definite keeper.

Split Pea Soup without Pork

I made this last night and it was really good but I would definitely use all chicken broth and add much more of it as it comes out way too thick. As the soup sits, it gets very thick so even with the leftovers you will have to add more broth. total broth was about 2 qts. if you cut the amount of split peas, then you can use less broth. I would make this again!

Eggplant Croquettes

this is a great recipe but I had problems with it. When I put them in the pan to fry they stuck to the pan and I think it was cause of the cheese. So I had to bake them. My recommendation is if you want to put in the cheese, bake them. If not, then you can fry them but I think the cheese makes them really stick to the pan. They taste great though....really delicious and I will make them again...probably fry them

Southern Candied Sweet Potatoes

I made this recipe last night and while it was really delicious, the next time I will do it a bit differently. I think there is way too much butter. 1/3 cup is too much and I believe 2-3 tbsp. is enough because otherwise it is too greasy. I would also bake it in the oven next time.

Broccoli with Garlic Butter and Cashews

Very good broccoli recipe although I didn't use the butter. I don't think butter goes very well with soy sauce. I used light olive oil instead. Everything did taste very good and I would make it again.
