Put in about double the feta just because I had it. Didn't quite use all of the pasta. Delish!

Green Tomato Relish

Reviewed: Sep. 14, 2009
LOVE IT! This really is as good as everyone says it is. We've put it on sandwiches, hotdogs, baked potaoes, mixed into tuna...delish! I only made 1/3 of the recipe - wish I'd made more!

Fried Green Tomatoes

Reviewed: Aug. 20, 2009
I'd never tried these before...very tasty! I used part olive oil and part butter to do the frying and one stack of Ritz Crackers. Great way to use green tomatoes!

Chocolate Chip Cheesecake I

Reviewed: Dec. 14, 2008
I recently made this and it turned out perfect! This will be my recipe for cheesecake from now on. After reading the reviews, I made a few minor changes...I used chocolate graham crackers for the crust, with butter and sugar - worked great! I also melted about 1 cup of good quality chocolate and mixed that in right at the end, allowing it to cool a bit first. Then after puting it into the pan, I still sprinkled some mini choc. chips on top - mostly for presentation. Don't peek in the oven - this trick really really works! I baked it as directed, then turned the oven off for an hour and walked away. Very tempting to look, but don't do it! When the timer finally beeped, I was truly amazed to see that the top was smooth, beautiful - with NO CRACKS! The cheesecake was dense, creamy and delicious! Thank you for this great recipe!

Maple Salmon

Reviewed: Apr. 18, 2007
I made this for dinner tonight and it was a hit. One major change though...I used tilapia instead of salmon. That's just what I had on hand. I loved it, hubby loved it, even my three young kids loved it! Will definitely make again!

Hot Dog a la Potato

Reviewed: Sep. 27, 2006
I made this a few weeks ago, just looking for something different to do with some leftover mashed potatos. Everyone loved it! In fact, my son loved it so much, he requested it for his birthday dinner!

Chocolate Peanut Butter Cup Cookies

Reviewed: Jun. 6, 2005
These are great! I made a double recipe, using an entire 22oz. bag of mini pb cups. I also omitted the cocoa powder and added just about 1/2 tsp maple flavoring because it really enhances the peanut butter flavor. Everyone loved them! Oh, and I also froze the pb cups after I cut each one in half, so that they would stay together better - and they did. Great recipe!

Banana Bread IV

Reviewed: Dec. 10, 2004
This bread got better and better with each passing day. I added chopped pecans and a handful of chocolate chips as well. I got one loaf and 12 muffins out of it. Before baking, I sprinkled the tops of both the loaf & the muffins with brown sugar and more chopped pecans - it gave it a nice sweet, crunchy top. Next time I'll add more chocolate chips!

Chess Cake

Reviewed: Dec. 10, 2004
I just brought this cake to a freind's house for dinner. It was great - everyone loved it! I made it almost exactly as the recipe stated...the only thing I changed was that I liberally sprinkled the top with chopped pecans before baking it. I chose it because I had everything I needed already in my pantry and fridge! Thanks!! Great recipe!!

Classic Butter Cookies II

Reviewed: Nov. 8, 2004
These cookies were great! I made a triple batch and cut them out into halloween shapes. We frosted and decorated them and had enough for all my kids' classes and extras for at home. I rolled them out fairly thin (less than 1/4") but they were not too crunchy - just right. They held their shape great and didn't expand the way some cut-outs can. I will make these again for Christmas!

Cranberry Orange Loaf

Reviewed: May 31, 2004
Delicious bread!! Recipie is very similar to the one on the bag of cranberries. I added lots of extra crushed pecans - so much so that people were asking me if there was oatmeal in the batter because the texture was changed so much. If you love pecans, try it...yummy addition to the Thanksgiving table!

Million Dollar Cake

Reviewed: May 31, 2004
Delicious! I served this cake for my daughter's first birthday...everyone loved it! I added a package of vanilla pudding to the cake mix - for a bit denser cake. For the frosting, I drained the oranges, then smushed them with the back of a fork and drained them again. I was worried that the frosting wouldn't be thick enough to stay on the cake, but it did just fine! Will definitely make this cake again - very springy, light and yummy!

Eileen's Spicy Gingerbread Men

Reviewed: May 10, 2004
These definitely lived up to their name...a cookie with a lot of punch! Frosted them with cream cheese frosting, delicious! My only complaint is that they got extremely soft...to the point that they were falling apart as we were eatting them! Still, delicious!
