Megan's Granola

I love this stuff! Have made it several times now. The last time I used regular rolled oats and not the quick cooking. Much better texture. Also increased the maple syrup to 1/2 cup, honey to 1 cup and brown sugar to 3/4 cup. (Ok, so I like it a little sweeter!) Also used dried cherries for the fruit. This was the best batch ever.

Chicken and Biscuit Casserole

Super good casserole! Since I was a little short on time I substituted an already cooked herb roasted chicken purchased at our local supermarket and cut this into pieces for the casserole. Otherwise, I followed the recipe exactly. There were generous portions. My husband did not allow me to send leftovers home with one of my kids who was here for dinner. He said she had to make her own! So I emailed her a copy. Definitely will make this one again.

Herbed Sweet 'n' Sour Chicken

Very tasty sauce but next time I will use a less cayenne. The cayenne overwhelmed the other flavors. After reading the other reviews, I will definitely use cornstarch to thicken the sauce plus marinate the chicken a couple hours before cooking. Good flavor. I will make it again.

Scallops with White Wine Sauce I

It was my husband's night to cook and he decided to try this recipe. We didn't have the cream so he substituted sour cream. The scallops came out great!! Of course, he patted himself on the back for being such a great cook. Easy meal to make. I (he!)will make this again.

Garlic Cheese Flatbread

Bread came out great the first time. My husband loved it too. I combined steps 1 and 2 by mixing the yeast, flour,salt and sugar with HOT tap water then mixing in the olive oil. I covered it and let stand until doubled in size. The final product was very nice with a nice texture. I will make this again. My husband thinks this will make a great pizza dough too!

Roasted Grapes and Carrots

Very easy to make. Took the advice of others and pre-cooked the carrots before roasting. Seemed like an odd combination to me but it was very tasty. I will make this again.

Greek Feta And Olive Spread
