Easy Decadent Truffles

I did the 2 cups each of choc. chips and sugar, and 2 ounces of dark chocolate as others recommended. I divided the mixture into 2 and used 3 1/2 tablespoons of Kahlua and Maraschino cherry liquor in each. You can't really taste the liquor, but I got glowing reports, which included me quitting my job to be a chocolatier...great recipe! I recommend rolling the final product in shavings of good chocolate (real milk/white chocolate) rather than the candied sprinkles, this makes a HUGE difference in the taste of the truffles. The white chocolate shavings were especially pretty in contrast with the colour of the truffle.

Healthy Banana Cookies

Great with applesauce! I changed it from oil to 1/2 cup applesauce, added 1/2 tablespoon of cinnamon and put in dried cranberries, flax seeds and chopped almonds

Mock Chopped Liver

Wow, this was very impressive. I used Knorr vegetable (bouillon mix?), and it worked just as well. I cooked the lentils til it was mush - 15 min for split red lentils - and whizzed the walnuts separately in my magic bullet. The onions I also whizzed separately then added the walnuts and lentil mixture.

Golden Yam Brownies

I cut it down to 1/2 cup of butter, 3/4 cup of white sugar, 3 eggs and I omitted the brown sugar and icing. It was fine that way, sweet enough as a dessert but not overpowering the yams. This suited my taste and waistline better :) Altho putting it to 1 cup white sugar would've made it more decadent.

Chocolate Rum Cake

Tried making it for the first time over the holidays and have made it perfectly 3 times already! Did notice that when I used 4 extra large eggs, the cake rose higher than when smaller eggs were used.
