Cajun Spice Mix

Great Cajun spice! Followed many reviewers recommendations and used only 1 tsp. of salt. I also did not have any thyme so I substituted it with basil and it was still great. The addition of 1/2 tsp. red pepper flakes added just the right amount of heat in addition to the cayenne pepper. I used it in a recipe found on this site - Linguine pasta with Shrimp and Tomatoes! Was excellent!

Gluten-Free Moist Chocolate Cake

AMAZING CHOCOLATE CAKE, best ever, even for those who are not required to eat gluten free. In order to make the layer cake a nice height, I adjusted the servings to 15 from 10 and used 3x8 inch round cake pans. This worked out absolutely perfectly!! I then frosted the cake with the Allrecipes Coconut Cream Cheese frosting, just frosting in between the layers and on top, leaving the chocolate cake exposed on the sides. It was the most beautiful and delicious cake I have ever made. I lightly toasted some shredded coconut and sprinkled it on the top of the cake. My husband, who is extremely gluten sensitive, is already looking forward to the next special event. If I didn't ration this cake he would eat a piece of it every day! ENJOY!

Gluten-Free European Apple Cake

FANTASTIC!! I don't have all those different flours on hand, so I just substituted 2 cups of all purpose gluten free flour which already has xanthan gum in it. I also cut back the sugar to 1 1/2 cups but will try even less next time. Consistency of cake is amazing and no one would guess it's gluten free!!!

Roasted Swiss Chard with Feta

Absolutely the BEST Swiss Chard recipe ever!! Only change was that I used 1 tbsp olive oil with the leaves instead of 2 tbsp. It's plenty and if you toss the leaves with your hands, it spreads nicely over all the leaves. Sometimes I even eat the whole thing as a main course, on my own, when no one else is around. Thanks for sharing this amazing recipe!!

Easy Lima Beans

I have been looking for a quick and easy lima bean recipe and am thrilled to say that this is the one!!! We love onions so I used a whole medium-sized onion and in addition to the cooking spray, I used a tablespoon of olive oil to saute the onions. The 1 1/2 cups of chicken broth was plenty and I did not have to add any water. As other reviewers did, I added salt, pepper and garlic powder to taste. Absolutely out of this world!!

Grilled Salmon I

BEST salmon recipe we ever ate!! I use a whole Wild Sockeye Salmon filet (around 1 1/2 pounds) when available. Used low sodium soy sauce and kept all other ingredients the same. I imagine the oil could definitely be cut to 1/8 cup. Spray grill so fish does not stick. Grilled flesh side down for 4 minutes first to get a nice glazed grill mark. Turned skin side down for another 4 minutes. DO NOT OVERCOOK WILD SALMON or it will be very dry. This is the only salmon recipe my family will allow me to make!! ENJOY!

Creamy Blueberry Pie

This is such an easy, no-fuss pie to make and it is outstanding!! I used fresh blueberries and made the filling exactly as directed. For the topping I substituted 1/2 cup firmly packed brown sugar for the white sugar and added 1 tsp. of cinnamon. The pie wasn't overly sweet at all. This recipe is definitely a "keeper" and I'm sure it will be fabulous during the winter using frozen berries when fresh are not in season.

Cilantro Chicken and Rice

This recipe is so easy and so delicious!! I did not add the red pepper (didn't have any),black beans or corn. I used Uncle Ben's long grain rice. It was fabulous just the way I prepared it and thankfully, my whole family loved it as well. I melted shredded mexican cheese over the top of the chicken for my sons. I highly recommend this recipe, especially if you are a Mexican food lover!!

Simple Turkey Chili

My husband is on Weight Watchers (maintenance) and this recipe is fabulous! I always double it (except for the cayenne pepper) and it lasts for a couple of days. In addition to the kidney beans (sometimes I mash them and sometimes I leave them whole), I add one can (two if recipe doubled) of rinsed great northern beans. I also add some frozen corn niblets. Even my sons, who are truly fussy eaters, love this chili. They add sour cream and shredded mexican cheese.

Italian Spaghetti Sauce with Meatballs

This recipe was an absolute hit with my whole family..something that doesn't happen very often!! The first time I made it, one of my sons ate 5 of the meatballs before I even served dinner. Therefore, I now double the meatball part of the recipe. The only change was that I added 1 1/2 cups of breadcrumbs, instead of 2 cups, to the 2 pounds of ground sirloin. I use petite diced tomatoes and double the amount of chopped onions. One time I sauteed sliced mushrooms with the onions and the sauce was also fabulous. Today, I used a hand blender to partially puree the sauce. I add on an extra 15 minutes of cooking time for the meatballs. This is such a great recipe, you can "tweak" it any way you like and it still comes out GREAT!! Thanks so much!! This is definitely a keeper!! Better than our favorite Italian restaurant!!
